I have been following this thread for quite awhile now. You all seem like a wonderful group! We have had a lot going on in our family for a while now, and have been eating out way too much, thus not healthy:guilty: So I am determined to get back on track and start menu planning. I could use some help, so that is why I am posting. I hope in time, I can be of help to others.

Mon- Spaghetti, salad
Tue- Hamburgers on the grill, corn on cob, watermelon
Wed- chicken on the grill, green beans, roasted potatoes on gril
Thur- stuffed chicken(the frozen kind you buy)fruit salad
Friday- steak on the grill, mashed potatoes, broccoli
Sat-
Sun- out for lunch, fend for dinner:rotfl2:
Mon-b b cue chicken stir fry
 
Got back from my trip Friday night and went grocery shopping yesterday morning. I really need to get back on track with eating better. My uncle had a heart attack the first weekend I was up there. Scared everyone. He had a 99% blockage of the LAD (100% blockage is usually called a "widow maker") and, according to the doctor, was 5 minutes from coding. It really freaked everyone out and made us look at our lifestyles. Luckily he survived, they put in a stent, and he was home within a few days and feeling well.

As for good news, I am thinking about doing a solo trip for Food and Wine next year PLUS a big trip with my cousin's family in fall 2015! Feels so cool having two trips in the plannings stages. We want to plan them so I can get an AP and TIW to help with costs. Super crazy excited!

As for my meal plan:

Yesterday: Steak, Baked Potato, Roasted Squash
Tonight: Cheesy Vegetable Chowder
Monday: Beef with Snow Peas and Rice
Tuesday: Chicken Burger, Corn on the Cob,Tomato and Cucumber Salad
Wednesday: Vegetable Lo Mein
Thursday: Baked BBQ Chicken Thighs, Mashed Potatoes, Roasted Squash
Friday: BLT, Fries
Saturday: Chinese Chicken Chopped Salad
Sunday: Vegetable Lasagna
Monday: Sweet and Spicy Citrus Tilapia, Roasted Squash, Couscous
Tuesday: Roasted Chicken Thighs, Salad, Roasted Potatoes
Wednesday: Red Beans and Rice
Thursday: Green Shrimp Curry and Rice
Friday: Vegetable Pizza
Saturday: Patty Melts, Corn on the Cob, Salad
Sunday: Thai Chili Salmon, Roasted Squash, Rice Pilaf

Lunches will be a lot of leftovers as I have not quite learned how to cook for 1!
 
Hubby is traveling for work a few days this week, which is when I always give into temptation to order out! So here's my plan:

Tonight: mussels and pasta, salad and left over desserts from the 4th
Monday: London broil, mushrooms, grilled potatoes
Tues: tilapia, rice, salad
Wed: buffalo chip wraps, potato chips
Thurs: rosemary lemon BBQ chicken
Friday - going out to celebrate landing a full time teaching position! Woohoo!!
 
DH grilled some salmon tonight. I made corn & couscous to go with it. I also cut up some cucumbers & tomatoes and drizzled them with a little balsamic vinegar.

Monday: Tri tip, salad, mac & cheese
Tuesday: Chicken enchiladas, Spanish rice, sliced avocado
Wednesday: Out to eat w/ my mom
Thursday: DH won't be eating with us, so I let DS choose what he wanted for dinner. He chose nachos.
Friday: Baked Rigatoni, salad, garlic bread
Saturday: DH will grill something, I'll make veggies based on what he chooses.
 

Friday night we had corned beef with potato pancakes and applesauce.

Last night we had pizza.

Tonight was corned beef hash with eggs and toast.
 
Friday night we had lentil soup with lots of veggies in it.

We had a party on Saturday, so we basically had leftovers for dinner - a mix of veggies and dip, vegan nachos and corn chips, and fruit.

Today my son made one of my favourite meals: vegan po'boys. The recipe is from the book Vegan Sandwiches Save the Day. The main part of the sandwich is portobello mushrooms coated in a spiced cornmeal and flour mix, then sauteed in a frying pan. You then take a baguette, spread on a tangy sauce (also part of the recipe), add spinach and tomato slices, then the cooked mushrooms. They taste so much like fried oysters that it is unbelievable. (Of course, I haven't had real fried oysters in many, many years, so maybe I've forgotten, but either way these are delicious!!)

Tomorrow I am planning a white bean soup with veggies and nutritional yeast to give it a cheesy flavour, served with steamed broccoli.

Tuesday I am planning a curry dish with seitan (wheat gluten prepared to taste kind of like chicken) and chickpeas and vegetables in a coriander chutney sauce (because we have some left over from the party on Saturday.

Tonight we had Greek Style chicken thighs and orozo pasta I made like risotto but I added some extras to it. I will post the recipe later.

Well, I failed at posting last week due to a hectic week, and still managed to make a few decent meals. We went out to eat for July 4th (YIKES) and then had take out July 5th (DOUBLE YIKES) and I cannot stand to dole out that kind of money. It is just too expensive for a family of 4 to eat out. So, I am back and posting. When I start reading all of your posts I get even more motivated!

Yesterday - Manicotti at DS17's request (he was hungry for it)
Today - Fish with Mango/Avocado Salsa; Rice; Veggie
Tuesday - Probably homemade pizza with DH out of town
Wednesday - Quesadillas
Thurs - Pork roast in crock pot, will try to look up a new recipe
Fri -Probably my griddle cakes with sausage again - they were a big hit and are being requested
Sat - Will probably try something new in the crock pot

1 can Enchilada Sauce and one small can crushed chillies dump it over top a boneless pork roast.

When its done cooking pull the pork into shredded pieces and return it to the sauce in the crock pot.

Use it as the meat in taco's or in burritos. We usually also fry up some bell pepper and onion strips to add to the burritos when we have this meat.

So much yummier and interesting than ground beef
 
So far I am staying on track overall. Been moving days and sides around as I go, but using what I have.

Tonight I will be making the Baked BBQ Chicken with mashed potatoes and corn on the cob (instead of the roasted squash).
 
Last night we ended up out for dinner because our power was out due to some nasty storms. Thankfully it was on by the time we got home.

Tonight we had hamburgers, chips, and fruit.
 
I need to get back into this, we've been spending way to much money eating out... This weekend I'm going to take inventory of what we have in the pantry as freezer and get back to weekly meal planning.
 
And I am redoing my meals for next week. I should never make a meal plan more then a week in advance. Saw some pretty eggplant at the farmer's market so that changes some stuff. Gonna see what I can make with it!

Lunches for the week are leftovers sandwiches (I have roast beef, chicken, ham, and salami) with chips and fruit.
Snacks are fruit, vegetables with hummus and baba ganoush, yogurt, cheese, and nuts.
 
We are back from our trip. Grocery shopping is tomorrow, but the menus for the week are set.

Tonight/Monday: Chicken Alfredo, broccoli, garlic rolls
Sunday/Tuesday: Pork chop bake, wild rice, butter peas
Wednesday/Thursday: smothered hamburger steaks, mashed potatoes, green peas, cucumber/onion salad

Friday will be grocery day again.
 
Last night and tonight were bad. I worked long days and we are dealing with my grandma's illness. So last night we picked up Mexican on the way home and tonight we had Chinese out.

Monday: I have a data conversion at work so DH and DD will have a date night and I will grab dinner afterwork.

Wednesday: Shrimp and tortellini pasta with salad

Thursday: Bean and cheese burritos (with chicken for DH)

Friday: Hot dogs (turkey dogs for DH & I) and baked fries
 
Hello everyone. Ya'll are keeping me on track, even though DH and I had date night last night and went out. The boys went to the movies and ate there. So, it was kind of an expensive but needed night out. We have been under too much stress lately. So, back on track this week, but with an unwelcome surprise in my frig this morning. I bought a large family size (2 lb.) package of lean ground meat Friday, and was going to make meatballs to put in the freezer. I never got around to it and pulled the meat out this morning, and it had turned bad. I have done this before, within 2-3 day time period, and have never had this happen. $7 down the drain. I have learned my lesson. On to better things. I have a few ideas for the week.

Tonight - Dijon chicken with green beans and sweet potatoes
Tues - Fish that I never got around to making last week, with Mango Salsa

I will post again Wednesday! I apologize to the person who requested my Chicken Spaghetti recipe, I forgot about the request. If you would still like to have it please let me know. It has a lot of ingredients, but is so good. I break it down and chop veggies the day before and have my chicken either in the freezer or also boiled and deboned the day before. It makes a huge casserole that we eat on for several days, or put some in the freezer.
