Sending out more Hugs to Lily and charming!

this week it's just the Hubs and I .. we will eat at home most nights.. the weekend is still up in the air because I want to take off Friday and head to my Parents till late Sat afternoon but Hubs forgot to ask last Friday so he is asking today so we'll see..

Monday - cooks ham steak, corn and Hubs will have steakhouse potatoes and i'll have mashed cauliflower
Tuesday - baked 5 spice chicken, sauteed zucchini and we'll have leftover steakhouse potatoes and mashed cauliflower
Wednesday - crockpost smothered porkloin, sauteed zucchini - Rice for hubs and I'll have L/O mashed cauliflower
Thursday - will be grilled chicken parm with dreamfields pasta
Friday - - will be home made pizza
Saturday - steak on the grill, corn and grilled potatoes for Hubs
Sunday - Father's day, most likely a cook out with the in laws.

OMG for the first time ever I oven roasted the frozen corn with some evoo and s & p and it was SOOOOOOO good!!! too bad it's so high in carbs or I'd eat it every day!!! it got really sweet and crispy.. OOOOh yum!! Oh and Hub will only have enough potatoes for tonight.. so Wed side for him has changed to rice.. and cant go to my mom's this weekend (the boss has friday off and someone quit over the weekend so they are working short already)
 
Tuesday 11 - birthday dinner at MIL's

Wednesday 12- Easter Island chicken, mashed potatoes, asparagus.

Thursday 13 - tacos

Friday 14 - egg salad sandwiches, tossed salad

Saturday - My mother is cooking me a birthday dinner.

Sunday - BBQ pork ribs in crockpot, roasted cabbage, cooked carrots
 
Tonight we had Boston Market for dinner. I have no excuses, I was just lazy. But I did use a coupon.
 

New to the thread. Started in on June no buy so have been cooking at home a lot more.

Monday-chicken fried rice.

Tuesday- Baked pork chops, mashed potatoes, peas.

Wednesday(tonight)- baked chicken thighs, scalloped potatoes, green beans.

Thursday-spaghetti with cheese garlic bread.

Fri-sun don't know yet. Grocery shopping tomorrow.

We had dinner out with my grandma tonight after her doctor's appointment. She has to have surgery to remove a lump in her breast, which is cancerous. The dr is optomistic that the surgery will get everything and she will not have to do chemo or radiation.

That sounds good. How did you oven roast frozen corn?

Easter Island Chicken???? do you mind sharing, sounds interesting.... I keep thinking of a big chicken head!

It's kind of a long story. I found the recipe online, but it was called Pat's Anniversary Chicken. Well, I didn't want to call it that and we were having it the day before Easter, so I thought maybe Easter Chicken, but I didn't really want to call it that either, because I didn't want it designated for Easter only. So my dh jokingly said what about Easter Island chicken? And it just stuck.

Basically it's chicken breasts baked in a sauce of teriyaki BBQ sauce, ranch dressing, and bacon bits, with shredded cheddar sprinkled on top. It's really tasty. :)
 
That sounds good. How did you oven roast frozen corn?

All I did for this was put about 1 T of EVOO in a round metal cake pan, cover the bottom of the pan with a layer of the frozen corn and mix good so all kernels get coated, sprinkle with S & P and baked at 400 stirring about every 5 mins for 20 mins or so till the desired browning occurs.. DELISH!!!

Tonight Hubs is making chicken parm with Dreamfields pasta and no sugar added sauce .. He will prob have garlic bread with his and I'll have salad

Thank you....sounds yummy! I'll have to give it a try and I just bot a bunch of chicken so I have most of the ingredients at home already.
 
Yesterday was Teriyaki Chicken with rice and broccoli. Tonight we are having Red Beans & Rice with sausage and a side of green beans.
 
Was able to juuuuuuust squeeze everything into the small freezer so we unplugged the chest freezer in preparation for the big move. Every now and then an ice chunk falls down with a great big clatter and my DS8 and I crack up. Moving day is a week from Saturday, so this is the plan...

Tonight: Mushroom soup Pork chops, noodles, frozen veggies
Friday: Homemade subs and fruit (in the car--going on a weekend road trip)
Sat: Dining out for Father's Day
Sun: will be coming back home so likely fast food
Mon: burgers, frozen veggies, maybe rice as a side?
Tues: wonton soup and grilled cheese sammies
Wed: Mexican night (beef tacos)
Thurs: Kraft dinner, frozen veggies, maybe garlic toast?
Fri: ordering pizza as the dishes will all be packed after lunch
Sat: MOVING DAY!! Fast food dinner somewhere on the road!
 
I'm new to this thread but I have some freezer food that needs to be eaten up before our move. The deep freezer has been emptied so I need to unplug it and clean it and let it air out ASAP.

I have this in the freezer:
2 boxes of popcorn shrimp (only for the boys as dd won't eat it and I'm allergic)
About a dozen meatballs
A bag of breakfast sausage
2 bags mixed veggies
1 large bowl of sugar snap peas and carrots
2 boxes of spring rolls (4 in each box)
2pie crusts
Large bag of uncooked chicken wings - will make into hot wings
About 2lbs of ground beef (in one package)
2lbs of butter- probably will have to be trashed since I only use them for holiday baking and they won't keep for the long drive.
Lots of Popsicles (can be unfrozen, those pops that come in the box unfrozen)

I think that's it for freezer food. In the fridge I have:

2packs of hot dogs
Bunch of shredded cheese
1brick of mozzarella
9 eggs
Lots of baby carrots

I think that's it for the fridge.

I'm really not sure what meals to make. I'm making 2 pumpkin pies with the pie crusts but the kids will eat those in just a day or so. It's really just a mishmash of things that we normally have on hand for last minute meals and its not what I really want to eat on a daily basis until we move but it is what it is. LOL

We have tons of pantry items and spices that will all come with us so I'm not worried about that stuff.
 
Didn't make it shopping yet but tomorrow we are having pork chops (again, lol), mac n cheese, and a veggie. If I ask my DH he'll say corn, DD will probably say green beans. We'll see who is close by when it's time to cook. Haha.

(this is meal I did not make this week, we had a leftovers night instead)

Oven BBQ Chicken
Potatoes AuGratin
Southern Style Green Beans

Wednesday:
Tuna Helper
Green Peas

Thursday:
Korean Beef over Rice
Steamed Cali Mix

Friday:
Hot Beef and Cheese on Onion Rolls
Chips
(a meal we were supposed to have tonight...we get a date night instead :cool1:)
