Saturday - Hamburgers (on grill if weather cooperates)and baked french fries
Sunday - Black bean chili over rice
Monday - Baja fish tacos, corn, and coleslaw
Tuesday - Frittata with spinach and chorizo sausage
Wednesday - Chicken fried steak with gravy, rice, and green beans.
Thursday - Pizza
Friday - Grilled london broil and pasta primavera
 
Last night we had quesadillas with taco meat and cheese inside (I had made taco meat earlier in the week and needed to use up the leftovers), yellow rice on the side, guacamole and sour cream. They were really good, so good I may have another one for lunch today, lol.

Tonight we are having turkey chili and cornbread with grated cheese, light sour cream, and green onions on top. My family LOVES this recipe. They prefer it over my normal chili recipe that I've been making for 10+ years.
 
I had some greek yogurt to use up and I was too lazy to make the parmesean chicken strips from scratch :lmao: so I found a recipe for Tandoori chicken in the crockpot and I made that instead. We're going to have that inside a naan wrap with a garden salad and I'm really hoping that it proves as tasty as it smells.

Tomorrow night is going to be a spaghetti bolognese and with the leftover sauce I'll likely make a pasta casserole for Sunday night. I think I'll make garlic bread as well and we'll have salad or (if it's all gone) some frozen mixed veggies.
 

Wednesday night we got a family dinner from our favorite italian restaurant using a groupon.

Last night we had burgers with fries and fruit.

Tonight is steak with potato pancakes, salad, and applesauce.
 
I made crock pot BBQ riblets the other night with broccoli slaw. Today was crock pot Swiss steak. We are having another Fiesta (it's where we each bring a dish) at my Spanish class Wednesday and I am going to be making my Chilies Rellenos.

Going into the weekend I am worried out of my mind! My oldest DD has been sick for the last few weeks and has a golf ball sized lymph node on her left side of her neck. One of her blood tests came back elevated so we are going to go see a surgeon this week to get a biopsy. I am thinking they are going to have to sedate her for this? She's only 13. My kids have had the worst luck with illnesses. My youngest had her gall bladder out last July at age 7. All we can do is pray for the best.

Besides all this mess, one of my classes got cancelled so I had to scramble to pick up a new one. Fun!

Hi everyone. I just found this board, and I can definitely use help with dinner ideas!

No clue yet what's for dinner tonight, but just so I can contribute something :) last night was tilapia, pearl couscous and edamame.

The night before I made Emeril's linguine with clam sauce, which I've only made a few times, but it's such a hit with the family I should really make it more often. The only thing I do differently is that I add a whole can of minced clams with the juice instead of just clam juice.

Prayers said for your daughter. It's normal for the blood work to elevate with infection in the node, so I will be praying that that is all it is. I'm sure it's very scary to have to wait though.

Tonight we are having lemon chicken cutlets with rice and carrots.
 
Prayers for the 13 yr old!

Last night's crockpot Tandoori chicken was a great success. The kid's wouldn't touch it (didn't expect them to) and there were five breasts cooked, so DH and I are going to have the leftovers tonight...perhaps over rice...and save the spaghetti bolognese for dinner tomorrow night.

DH and I made mini crullers this morning to bring to a potluck event tonight and they are DELICIOUS!!

I just did a giant grocery shop. I went in without a list because we were out of most things and came out $260 poorer:rolleyes2
There were great deals on meats this week so I did end up stocking up quite a bit.
So here's what I am thinking so far..

Sat.. Homemade Nachos and Broccoli on the side (have some I need to use)
Sunday.. dinner at my parents
Monday.. Spaghetti Pie
Tuesday.. Pork Chops, Asparagus, Carrots, Baked Potato
Wednesday..Wraps and salad
Thursday.. Leftovers or breakfast for dinner..it's basketball night.
Friday... Chicken or Veggie Burgers, Fries, Salad
Saturday.. Easter Dinner with my family
Sunday.. Easter Dinner with dh's family.

3 nights that I don't have to cook this week!
 
Meatloaf tonight (making regular and a mini turkey for DS15 who stopped eating all meat except poultry 8 years ago. He found out where it all came from and that was the end of that), with potatoes and carrots.

DW mentioned making sauce for tomorrow so I think I'm off the hook for cooking :). We will have pasta, sauce, salad and bread. Not sure if she's doing meat or no meat. Don't really care when someone cooks for me :)

Sounds good! I've never made a spaghetti pie. Do you have a recipe or just throw it together?

I'd say the recipe I use is close to this one. We do put some olive oil in the pasta and we make sure to cover the noodles with the sauce or they get dry and crunchy on the edges and the kids don't like it that way. Ours has a layer of cottage cheese as well.:)

We had Tilapia tonight with mashed potatoes that had cheese and cream cheese in them. I am going to make some corn flake peanut crusted chicken tomorrow and make some wraps out of them. (I might keep this dish for Wednesday since I have to fry up some chilies rellenos for my Spanish class.) I don't want to waste oil.
I don't plan on going grocery shopping this week and am getting out of Easter cooking because we are going away for the night to Key Lime Cove water park in Gurnee.

So, mom was in the hospital last week. As such, we did not have most of the meals on this past weeks plan. Here is what I am thinking for this week!

Sunday: Corned Beef and Cabbage
Monday: Corned Beef Hash, Eggs, and Toast
Tuesday: Hot Dogs, Fries, and Fruit
Wednesday: Frozen Meal
Thursday: Sweet and Spicy Citrus Tilapia, Green Beans, and Rice
Friday: Tacos, Refried Beans, and Mexicorn
Saturday: Shrimp Lo Mein and Egg Rolls
Sunday: Ham, Rolls, Deviled Eggs, German Potato Salad, and Peas and Carrots
 
This week's menu:

Sunday - Lasagna, tossed salad, garlic bread
Monday - Roast beef, baked potatoes, corn
Tuesday - Oven fried chicken legs, rice, green beans
Wednesday - Sweet italian sausages on the grill in buns with onions & peppers, french fries and coleslaw
Thursday - Meatloaf, mashed potatoes, peas
Friday - Chinese Take out
Saturday - Crock pot beef stroganoff over egg noodles, cauliflower and tossed salad
