Eat at home 2!

Hi Everyone, i've been missing from the thread but staying on track with eating in.. I started Atkins on 2/18 so planning is essential now! (I've lost just over 17 lbs in the 3 weeks and most importantly my blood sugar has gone from 250ish all the time to about 140ish most of the time :) )

this week my DD is home from college and my it's our week with DS so we have a full house -- LOVE IT!
Monday - Sloppy Joes - for the family and I had Groton's grilled classic shrimp and fried cabbage
Tuesday - Meatloaf, spiral M & C, instant garlic potatoes and green beans for the family and I had the Atkins frozen meatloaf dinner with a side of green beans (it was good but not meatloaf - more like salisbury steak)
Today - Fresh take parm chicken nuggets, garlic shells and green beans for the family and a grilled chicken breast, green beans and sauteed zucchini for me
Thursday - pan fried Ham steak, white rice and carrots for the family and Ham steak, leftover zucchini and cabbage for me
Friday - Meatball subs for the family and I'll be at a weekend scrapbooking event so my dinner will be an Atkins chicken alfredo meal with a side of cold cut up veggies
Saturday - 3 meat pizza for the family and I'll be scrapping again so I'll bring some kielbasa with cabbage..

Sunday - Steaks on the grill, broccoli casserole and leftover pasta salad

Monday - Eggs, sausage, grits, and cut up fruit

Tuesday - Spaghetti and salad

Wednesday - Chicken wings, homemade fries, and sauteed zucchini

Thursday - Pizza

Friday - Chicken with multi colored peppers over rice

Thursday night I worked late so we had soup and sandwiches.

Friday we had beef stew over noodles.

Last night we had beef with snow peas over brown rice.

Tonight is corned beef with cabbage, carrots, potatoes, soda bread, and angel food cake with berries and whipped cream.

I'm also late to this game, but what a smart idea! I'm going to go back and read through to get more meal ideas. :)

We're a family of 3 with one on the way. Our 2.5 year old is an adventurous eater and up for most anything! I plan Saturday to Friday weekly because I shop on Fridays.

S - Potato Leek Soup
S - Slow Cooker Roast Beef with Mashed Potatoes
M - Beef Dips (leftover beef) and Salad
T - Taco Soup
W - Leftover Taco Soup
T - Ham & Cheese Sliders in the Slow Cooker
F - Pizza or Leftovers
 
I have to ask....is your name Lorien? My daughter's name is Lorien and I only know of one other Lorien...who was a waitress in Indianapolis whom my husband first got the name idea from. Well, another place her name idea came from was the place Lothlorien in the book Lord of the Rings...so cool if that is what your name is...I feel bad sometimes that her name is so unique NO one else has it!

Im just seeing this now!! :) No that is not my real name but is a beautiful name IMO! Lorien is the planet in the movie I Am Number Four that they are from. I thought it was cool so I gamed with it and now it just kind of stuck!!
 
This week's menu:

Sunday - Cheeseburgers, potatoe salad, tossed salad
Monday - Beef stroganoff in the crock pot, egg noodles, peas
Tuesday - Shrimp, broccoli, mushroom alfredo over penne pasta, tossed salad
Wednesday - oven fried pork chops, stuffing, green beans
Thursday - Asian chicken legs in the crock pot, rice, stir fried mixed vegetables
Friday - Roast beef, baked potatoes, corn
Saturday - BBQ ribs, french fries, tossed salad
 
Hey all! Back from my spring break trip. It was a ton of fun even with the misadventures. I ended up at Urgent Care due to an Upper Respiratory Infection that was making my throat swell. Then mom missed a step and fell, breaking her upper arm bone at the shoulder joint. We will both mend with time and all we can do is laugh at our misfortunes.

I have to get to the store tomorrow (I don't even have MILK atm) so here is my meal list. It's a crazy week!

Monday: Chicken Nachos

Tuesday: Deli Sandwiches with Sliced Tomatoes

Wednesday: Sweet and Spicy Citrus Tilapia, Green Beans, and Rice Pilaf

Thursday: Something from the freezer section. Will decide when I get to the store.

Friday: Corned Beef and Cabbage (since we missed it with traveling today)

Saturday: Corned Beef Hash, Eggs, and Toast

Sunday: Shrimp Lo Mein and Egg Rolls

Tonight is spaghetti with homemade turkey meatballs.
 
LilyWDW, you have a great attitude about it! Sorry to hear of the injury and sickness. Hope you guys have a speedy recovery!

I don't know what's for dinner tonight. I have some ground turkey, onions, green and red pepper. I may season the meat well and make a meatloaf with some baked potatoes and greens. Yeah. I think that's a plan. :)

Or you could add a can of beans, a can of diced tomatoes, chili powder and cayenne and make chili! Serve it with white rice or cornbread (I make the jiffy one, shhhh don't tell my husband, lol!)
 
I hate to crash this fabulous thread, but I need some help in this department!!

I would LOVE to be able to plan my dinners out a week ahead of time, and Im usually a very organized person (you should see my Disney spreadsheets!!) but Im lacking when it comes to planning dinners!!

I work full time, and my boys are 13 1/2 and 11 and we have baseball games like 2-3 times a weeknight (and practice too, but they're usually over by 5:30/6pm).

DH works too, and he's a fabulous cook but rarely gets home before me..

so if I want to start planning our dinners, HOW do I get started?? :eek: Do we just sit down and make a list of all of our favorite dinners and then just plug them into a calendar?? Since I never pre-plan dinners, we have a TON of food in the pantry and freezers...that way, whatever someone suggests, I usually have the ingredients!!

Im ready to learn!! :crazy2:

Chips and Dip

Tuesday:
Corned Beef and Cabbage (haven't had our traditional St. Patty's meal yet since we had dinner with in-law's yesterday)
Fried Potatoes with Peppers and Onions

Wednesday:
Salsa Chicken
Rice
Cheese Quesadillas

Thursday:
Out to Dinner with Friends

Friday: Kids come back home...
