I hope everyone had a good holiday. Mine was nice we got to take my grandma to my aunt's both days to celebrate with the family.

Tonight we had chicken and dumplings. It was snowing and comfort food sounded so good.
 
The last of our house guests left this morning. This is how I feel...:crazy2::faint: We will get to rest tonight, but then DH's brother and his little girl arrive at the in-law's house tonight. So, just a short respte before we end up spending the weekend with them. I am ready for life as normal again. ::yes:: Dinner tonight is quick and simple:

Jambalaya with Smoked Sausage
Oven Roasted Corn
 
I am going to go ahead and post next week's menu since I probably won't make it back over to the Dis until Wednesday or Thursday of next week. Funds are way low after the holidays, so next week we will be eating from what is already in the freezer and pantry. Since our schedule will be dictated by our coming and going from in-law's house, I will not even try to figure out what nights we will eat what. Here is just a list of meals I have ready to prepare for WHENEVER...

~ Taco Soup and Cheese Quesadillas
~ Leftover Casserole (http://allrecipes.com/recipe/leftov...turky&e8=Quick Search&event10=1&e7=Home Page#) made with Turkey and a Salad
~ Deer Steak and Gravy, Mashed Potatotes and Sauteed Squash
~ White Beans and Ham with Cornbread
~ Spaghetti, Garlic Toast and Steamed Broccoli
~ Biscuits and Sausage Gravy with Scrambled Eggs
~ I am leaving the seventh meal open since I am sure we will have dinner at the in-law's house at least once

Turkey dinner on Christmas Day, and...

A luau last night with friends so it was ham, polynesian rice, broccoli, salad, buns and assorted desserts

Tonight: LEFTOVER CITY!! :rotfl2:

Tomorrow: Turkey pot pie

Saturday: Finish up leftovers
 

Tonight we went simple with grilled cheese and tomato soup.

Tomorrow night is balsamic roast beef in the crock pot with noodles and salad.
 
Well now that the holidays are winding down I suppose I should make a menu. We could continue to graze on whatever is close enough to throw in our mouths but I'd like to not have to purchase everyone in the house a new wardrobe to fit into so it's time to knock that off:rotfl:

Tonight.. Ham, Broccoli, Garden Salad, Baked or Mashed Potato

Saturday.. Dinner at my sisters (I think it's Prime Rib.. postponed family get together)

Sunday.. Casual get together lunch here of soup and sandwiches. Just the kids and I that night so we'll do leftovers

Monday.. Spaghetti Pie

Tuesday.. Considering making a turkey for New Years Day, butternut squash soup, stuffing, mashed potatoes broccoli

Wednesday.. Leftovers from turkey dinner

Thursday.. Hamburgers, Fries and Salad

Friday.. Some kind of homemade soup. I'll have leftover turkey and ham so I need to make something
 
Hey all. Sorry I have been quiet for so long! Mom ended up in the hospital again over Christmas from dehydration, low blood pressure, and low platelet and white cell counts. She got out yesterday and is feeling pretty well. My family is coming into town today through Tuesday so I have a lot going on at the moment!

Here is the menu I have for today through Tuesday night. I will then go back to the grocery Wednesday morning (for meals Wednesday through Sunday) and then back to normal (at least until classes start).

Tonight: Depends on when family gets into town
Saturday: Tacos and Mexican Rice
Sunday: Baked Chicken Parmesan, Spaghetti, and Garlic Bread
Monday: French Onion Soup and Snacks
Tuesday: Filet Mignon, Lobster Tail, Baked Potato, and Creamed Spinach

Saturday - Leftovers

Sunday - Enchiladas, rice and beans

Monday - Pasta with meat sauce, peas and garlic bread

Tuesday - Turkey, mashed potatoes, green beans and rolls

Wednesday - Swedish meatballs over egg noodles with brussel sprouts

Thursday - Leftovers

Friday - Chicken and dumplings
 
Well Lilly, I wish your Mom a continued speedy recovery!

Tonight we might be having some chicken turn overs with puff pastry, some Dijon mustard, and peas. We've got some pierogies I might make with that. I am kinda in a funk and really don't want to make anything. But I know without me the family will starve:rotfl:
 
Now that winter has come I see so many people with Chicken and Dumplings on their menu... can you please post your recipes for this... it sounds so good.. I know I can find the recipe on the internet but I would love to know which ones you all use.

Mine is SUPER simple
I boil chicken breasts and shred them. I add some chicken bouillon and pepper for flavor. I buy frozen Reames brand noodles or dumplings and simmer them for about 45-60 minutes. Add whatever veggies sound good. That's it! So easy ad a favorite for both of my kids

I have a simple crock pot recipe. This recipe makes about 8-10 servings. 3 of us eat on it for a couple days.

I put 3 frozen chicken breasts in the bottom of the crock pot. 1 large (or 2 small) can of cream of chicken soup. 1 16 ounce can of chicken broth. Carrots, onion, and peas (we use a frozen mixture from our grocery - I put in about half a bag, but you could put none in or adjust it however you like). Cook on low 6-8 hours. One hour before its done, add one more can of broth and 2 cans of biscuits. I cut the biscuits into 4 pieces. Cook for the last hour and then enjoy! So incredibly simple and delicious!

I've been away from this thread for awhile...Just to crazy with the Holidays...Now, I'm back:cool1: All though we have stuck to eating at home.
Tonight (Friday) was left over pulled pork that was made yesterday w/ corn on the cob and cold slaw.
Saturday Chicken an Dumplings from above. And making Broccoli and Cheese soup in the crock pot for Sunday.
 
are you guys planning on a new thread for 2013 or continuing this one?
also, does anyone have set menu plans for the eek, for example, mon, soup, tues, pasta...etc...thanks!!
 
I have our meals planned for the month of January. We spent several hours yesterday prepping and cooking some of them to freeze. I still have a few more things to prep today and tomorrow. We had Taco soup friday night and last night we had cheesy potato with smoked sausage. Tonight its lasagna. Our goal is to not eat out all month.
