Happy Monday of a short work week!!!! this week it is Me, Hubs and DS - DD will pop in and out and my Mom is sleeping over Thur & Fri

Last night was homemade baked beans and rolls
tonight will be L/O meatloaf & garlic shells for DS, L/O cheeseburgers for Hubs, and L/O popcorn shrimp for me..
Tuesday will be baked chicken (I forgot to defrost it for tonight LOL ) egg noodles with parm and garlic salt and green beans
Wed night is Pizza - just the frozen kind..
Thursday - Happy Thanksgiving off to the in laws - Hubs in charge of the pumpkin cheesecake and I am making the classic version of Green Bean Casserole in my crockpot
Black Friday -- Chinese for most of us (not sure what DS will want)
Saturday -- IDK..
Sun - Boiled ham dinner with all the fixins..
 
Eating Low Carb for a few days this week and next to try and melt some stubborn belly fat. Going to see if this works at all...

Tonight: steak and salad
Tuesday: mexican night
Wednesday:chicken thighs and broccoli (not sure yet how I'm going to do them up)
Thursday: Pork chops and greek salad
Friday:Chicken Parmesean and pasta
Saturday: Homemade pizza
Sunday: Rotisserie Chicken, not sure of veggie yet
 
Tonight I will be heading up to the hospital to see my BFF's brand new baby boy (being born as we speak)!!! DH will have dinner and the kids all on his own...but I did make is SUPER simple for him. I have peeled, chopped and prepped everything so that all he has to do is throw it in a pan and cook it. He will be serving:

Fried Smoked Sausage and Potatoes
Steamed Cabbage

The steak was not fully defrosted yesterday when it was time to marinade it, so we decided to have chicken breasts and salad instead.

Tonight is still Mexican, tomorrow is the steak and we'll leave the chicken thighs in the freezer for another week.

Thursday and onward should remain the same!

I baked it and skipped the sauce and cheese to make it healthier and had to chop it in half because these chicken were obviously related to Dolly Parton!! :lmao:
 
DSIL invited her family over to our house tomorrow to watch the Ohio State/Michigan game (GO BUCKEYES!!!)...so change of plans.

I'm making what I had planned for dinner for lunch-- hot dogs, baked beans, mac & cheese, and putting out the leftover pistachio whip I made for tonight. I told her to bring hot dogs and buns for her family and to bring a bag of chips.

I have no idea what we'll do for dinner. DH said we can just do a free for all which is fine as long as they're not still taking up space :-/
 
Working on my grocery list for shopping on Monday so I will post my meal list for the week!

Sunday: Chicken Piccata, Spaghetti with Butter and Parm, and Steamed Broccoli

Monday: Left over soup

Tuesday: Shrimp Pad Thai

Wednesday: Crockpot Creamy Italian Chicken and Egg Noodles

Thursday: Leftovers

Friday: Pork Chops with Balsamic Peppers and Mashed Potatoes

Saturday: Steak and Black Bean Nachos

Sunday: Penne with Italian Sausage, Tomato, Peppers, and Spinach
 
For lunch today I am stealing a idea from KFC. I made a sweet potato bowl topped with gravy and turkey.

I am not sure what we are doing tonight. Possibly turkey and gravy over toast. Not sure about Sunday. Monday it's gonna be turkey soup.
 
Sunday - Turkey breast in crockpot with remaining leftover sides.
Monday - Turkey sandwiches / broccoli soup
Tuesday - Turkey casserole with stuffing / green beans (crockpot meal)
Wednesday - Ham and bean soup (crockpot) with cornbread
Thursday - Pizza
Friday - Baked ziti
 
I hope everyone had a nice Thanksgiving. We did and since there were only four us I made a smaller meal. This weekend has gone pretty well despite my working like crazy.

Friday night we had hamburgers with chips and fruit
Last night we had french toast bake with sausage
Tonight is chicken fettuchini alfredo with broccoli and salad

I am working on this week's menus
 
Well it's Sunday night and time for yet another weekly menu! No thanksgiving leftovers for this Canadian:sad:

So..
Sunday.. It was a bit of a free for all. We ate lunch late and everyone grazed for dinner.

Monday.. I am making butternut squash soup during the day. Dd will have that, the rest of us will have the chicken wraps I planned for tonight.

Tuesday.. Spaghetti Pie

Wednesday.. Chicken Fingers, Fries, Salad

Thursday.. something quick before practice. Maybe grilled cheese and soup and veggies.

Friday.. Pizza and movie night

Saturday.. Breaded Pork, Mashed Potatoes, Carotts
 
My contribution to Thanksgiving potluck was cauliflower au gratin. Since I found out when I arrived that there were only 8 guests, instead of the 16 I'd been told to cook for, there was plenty of casserole leftover.
This evening I put some (including the topping, which was breadcrumbs, shredded cheese, and those crunchy onions) in the blender with a big splash of milk and gave it a good spin. I put it in a saucepan with some of the casserole lightly chopped to add some extra chunkiness, added a little seasoned salt and pepper, and heated it up. After putting it in our soup mugs, I topped it with some extra shredded cheese, and served it with whole grain rolls.
My only regret is that there isn't any left for lunch tomorrow.
 
Monday (tonight): turkey and wild rice casserole

Tuesday: homemade pizza and salad

Wednesday: taco salads

Thursday: Italian crock pot chicken with carrots and potatoes

Friday: DH concert - so he will probably just snack before and I'll eat leftovers.

Saturday: Frozen stuffed chicken breasts (got them at Publix on sale for $1!) and probably some kind of veggie.

Sunday: don't know...

Hi Everyone, Hope your turkey day went well - ours did but sadly no leftovers as it was hosted by someone else.. this week is just Hubs and myself and well Hubs is on vacation all week and I'm working M- W and vacationing TH & F ..

Plan looks like this
sunday night - KFC.. hubs paid with his bday $$ :)
tonight - Hubs is making Chicken Cordon Bleu, chicken rice and green bean fries
tomorrow - frozen pizza
Wednesday - Thanksgiving - turkey tenderloin, gravy, mashed, sweet potaotes, squash, corn, stuffing, cranberry sauce and rolls. OOh and a bit of leftover GB casserole from real thanksgiving.
Thursday - Cranberry glazed pork, rice pilaf, L/O veggies from last night
Friday - our 4th anniversary so we $$ budgeted so we can go out - not sure where yet.
Saturday & Sunday - not sure ... maybe burgers one night and leftovers the other..
