We ended up eating out since my grandma had surgery and we did not leave the hospital until 7pm.
 
My menu starting 11/26 and ending 12/14. We returned Sunday night from celebrating Thanksgiving with our extended family in a beautiful chalet in Gatlinburg TN. Since there were 4 families the cost very doable and we really enjoyed ourselves. I am being lazy with dinner on Monday since I am still tired from the drive. We did go to the grocery on Sunday night but that was about it. Here we go!

Monday –soup and salad
Tuesday –chili dogs with baked beans and chips
Wednesday – oven “fried” chicken with Jasmine rice and lima beans
Thursday – Crockpot green beans with ham & potatoes
Friday –– Chili with corn bread and put up the Christmas Tree
Saturday – Indulgence night! Country Fried steak “fried” apples, mashed potatoes, left over green beans; work on the tree decorations and start the outdoor lighting
Sunday – –grilled burgers with oven roasted potatoes and broccoli, hopefully finish decorating the tree and the rest of the house.
Monday – Part Deux night- nacho’s using left over chili and salad
Tuesday –- Pasta with Turkey Meatballs and garlic flatbread for DH and pasta with veggies for me
Wednesday –Oven Baked Ham with roasted sweet potatoes and kidney beans
Thursday – Tuna croquettes with veggie couscous and mixed veggies (just like the salmon ones only we use tuna)
Friday – Part Deux night – pork and veggie fried rice using left over ham with veggie pot stickers
Saturday – Dinner Out – Dinner with my cousin since we won’t see each other during Christmas due to travel (we come home the day they leave)
Sunday –Indulgence night. Roasted Turkey breast with stuffing and all the fixin’s
Monday –Part Tres night -Jambalaya finishing up left over ham with chicken and shrimp I have in the freezer (I will dice the ham and freeze it Wednesday so it stays good)
Tuesday –Part Deux night – turkey and veggie fried rice with veggie pot stickers
Wednesday –baked fish, veggie couscous, peas/carrots
Thursday – Leftover Palooza - Get ready for our trip to WDW – let’s clean out that fridge!
Friday – we leave tomorrow! Grilled Cheese and Bean with Bacon Soup (out of can since we are leaving)

We spent $120 at Kroger which is a little more than normal but I was able to get the Turkey Breast which we will use for sandwiches for lunch too and the ham which also allows sandwiches. I also purchased canned soup and needed rice which I purchase in bulk so all in all not too bad.
 

Hot dogs and pringles tonight with raw baby carrots and steamed broccoli. I made chocolate chip cookies for dessert!!
 
Tonight we're having roasted sweet potatoes, topped with ground beef (thawing in the fridge right now), cheese, and whatever misc veggies that are in the freezer... probably asparagus, broccoli, and kale. Making enough to have leftovers for lunch tomorrow, too. Yum.
 
last night was rotisserie chicken with mashed potatoes and broccoli

tonight is leftover night...leftover salmon for hubby, leftover hotdogs for me and leftover mac and cheese for the kids...side dishes are salad and whatever else is in the fridge that is still edible.
 
Tonight is... whatever I decide on when I get home from class. Which means a lot depends on what time we get out. Maybe taco bell. Not sure yet.
 
Went to the market today but didn't have a hard-set list/plan, so while I picked up some meats and things we use, I don't have a good menu set yet. Got a good deal (I think, LOL) on chuck roast that I cut into chunks.

Tonight is just pasta. Going to the movies afterwards and will prob get popcorn and/or candy there.
Tomorrow - ...thinking maybe beef stew.
Weekend onward - Not sure!

The next couple weeks need to be *reeeal* budget friendly but I don't want to live on pasta and Helper. :lmao: Gonna dig out the medium crockpot and look up some simple, few ingredient recipes.

Hey all...

Mom had to go into the hospital last night after being sick all day. She was admitted and her blood counts are low so she will be there a day or two for transfusions and to be sure they have the nausea and what not under control. As such, I have NO idea what I am going to do about dinner this weekend and next week since we don't have firm days/times when she will be released.
 
LilyWDW, I'll keep your mom in my prayers.

Friday ended up being herb chicken breasts (used the Knorr Roasters package, turned out okay...my bag didn't puff up until 2/3 of the way through cooking so I think that affected it) with onion roasted potatoes.
Tonight was dinner courtesy of The Habit. A new one is opening up nearby, so tonight they were giving away free burger combos. DBF and I couldn't resist free food from one of our favorite burger joints, LOL.
Tomorrow will finally be beef stew, since I put the meat in the fridge last night to thaw, can't hold it any longer.
Monday will be pasta with garlic bread.
Tuesday's going to be meatloaf with pan roasted potatoes and corn.

Rest of the week TBD.

Time for the Sunday night menu.. I can't believe the weekend is over already!!!

Sunday .. dinner at my parents. Turkey breast, mashed potatoes, stuffing, veggies, salad and apple pie. Was like having Christmas dinner already!

Monday.. Just ds and I and he has a practice so we'll do something easy. Not sure yet.

Tuesday..Spaghetti Pie, Salad.

Wednesday.. Potato soup, salad, biscuits

Thursday.. Breakfast for dinner.

Friday...will likely be take out or dinner while we are out Christmas shopping

Saturday..Pork schnitzle, Pan Fried Potatoes, Carrots and Celery with dip

MIL headed back to Florida today and cleaned out her cabinets and freezer and we got what was left. It greatly helped to supplement our menu and kept our grocery costs lower!
