Yesterday was crock pot mac and cheese. Today I am making peanut butter and shrimp egg rolls and Thai style peanut sauce shrimp over linguine. Both recipes should be in my blog under the search feature.

I am back on board after recovering from gallbladder surgery and finally being well enough to eat. I am still having to be careful to eat light/low fat.
Sunday (today): Italian crock pot chicken (new recipe - this turned out great!)
Monday: quesadillas - with chicken and spinach. Chips and salsa (for DH), fruit (me)
Tuesday (choir night): leftovers or chicken salad sandwich (DH)
Wednesday: crock pot low fat taco soup (more like chili)
Thursday: Breakfast for dinner (omelette for DH, egg beaters for me, fruit, grits) or leftovers
Friday: low fat lasagna + salad
After that... hmmm. Don't know.
oooh, I have the easiest way to make breakfast potatoes!!Plan has slightly changed!
Wednesday (tonight): crustless spinach quiche (egg beaters) + breakfast potatoes (not sure how I am going to make these yet!)
Thursday: crock pot taco soup
Fri: leftovers + potatoes (I have a bag of potatoes to use up!)
Saturday: low fat lasagna
Hello DIS friends!!Im a long time lurker on this board but finally felt I should contribute.
Weve recently begun the attempt to cut out packaged and processed foods which leaves me gasping over the price of organic ingredients, spending a LOT more time in the kitchen making things from scratch, and really bare looking cupboards.
Im still building up a reserve of foods with less (or no) additives and preservatives but I was really stumped when it came to making dinners since my usual standbys ( packaged noodles, potatoes, canned gravy and bean etc) are no longer in the house.
Ive been canvassing the internet for three weeks, trying to find recipes that dont use these products so that I can still make the foods we love, only healthier.
Im also trying to stick to my regular weekly food budget, so that I can continue to save up for the next Disney trip.
Anyway, I do a big shop every two weeks and then just pick up milk, eggs and fresh produce in the in between weeks, so my meal plans go from Thursday to Wednesday covering two weeks. As its Monday, were already a few days in but this is what Ive outlined for the date range of September 20th to October 3rd:
Thursday-Rotisserie Chicken with stuffing, mashed potatoes and gravy, salad
Friday-Garbanzo Bean Stew (ended up being East Side MariosDH had a really stressful week)
Saturday-Leftover chicken
Sunday-Shepherds Pie
Monday-leftover Shepherds Pie
Tuesday-Homemade Pizzas (using naan bread for the crust)
WednesdayBean and Rice Burritos
ThursdaySteak and baked potatoes
FridayTurkey medallions with our last package of Lipton noodles
SaturdayPasta Casserole

The oven heating coil snapped suddenly on Monday afternoon!! I wanted to make cookies, so I turned the oven on and........zzzzzzzzttttt! It made the sound like when a lightbulb burns out and then sparked and popped (and scared the bejeebles out of me). I looked inside and saw that it had snapped so I turned the oven off and hubby called the landlord. I'll be trying this. We just recently discovered we love Asian peanut butter recipes.

We're still waiting for him to fix/replace the oven. We were covered for Monday...we were having leftovers which we reheated in the microwave, but Tuesday we ordered pizza since we couldn't make it at home and I hadn't made a back up plan.
Tonight we are having hamburger helper instead of the burritos (I made them and froze them) but the rest of the week should stay the same.
Just wanted to update my few changes...
...two days before Christmas
....and my whole family was coming to MY HOUSE to cook and have Christmas dinner!
We had to find the replacement coil on the internet and have it shipped overnight. 
Happy Monday everyone! Last week went well it was just DH and I and we ate in every night! DS is home this week so we will see how it goes..
Tonight - Taco's
Tues - Turkey dinner night (turkey, gravy, mashed, stuffing and green beans) I have Zumba Hubs will cook
Wed - Shake & Bake Pork for me and Hubs and Chicken Strips for DS, noodles and GB and some stuffed zucchini for me
Thurs - Ravoili for Hubs, Cheeseburger Hamburg Helper for DS and Shrimp for me with more stuffed zucchini I have Zumba again Hubs will cook, and DS has hockey practice so Hubs will take him
Friday - DiGiorno 3 meat pizza for Hubs and DS and baked tilapia and broccoli for me.
Sat - big breakfast (we normally do this weekend days) and out for DS 16 Bday dinner (well his bday is 10/3 but he'll be at his Dad's house)
Sunday - big breakfast - then off to Hockey where I'll give DS back to the ex for the next week.. me and Hubs will have leftovers when we get home from Hockey..

oooh, I have the easiest way to make breakfast potatoes!!
I bake my potatoes in the microwave until theyre soft. Then take them out and cut into cubes (skin and all). I heat a skillet with butter and place the potatoes in it. I season with Badia Sazon Completa (you can use whichever seasoning you like, we just happen to always have Badia) and keep browning them up until they're just a bit crunchy outside but still soft in the middle. Quick and painless, done in less than 15 minutes!

I have a ton of Groupons to use and we might eat out tonight. Otherwise I am whipping something up when I get home. I have a freezer full of chicken and ground beef. The fall chill is in the air. When it starts getting cold I make at least one soup a week.
She's under the impression she's inviting the entire school (she's 6 and very social) I think it's going to be she and two other friends. I also get to make cupcakes for her class. I like that her birthday is around Halloween. One year we had a costume party Birthday and last year her birthday was on the Dream and at CRT. That's a hard one to top! I think this year we are taking she and two of her friends to Chuck E Cheeses.
Oh that does sound good. We just had the quiche with toast because I never got around to making the potatoes![]()
