DH and I are on the primal diet and trying to eat within a budget, so meal planning is super important. :thumbsup2 I have play rehearsal at 6:45pm on Tuesday/Wednesday/Thursday, so those nights we need meals that are on the table in less than 20 minutes. Here's what I have for this coming week:
Monday: eggs and bacon
Tuesday: steak salad
Wednesday: crock pot salsa chicken (recipe I found on this Budget board but we're leaving out the corn and beans to make it primal-friendly!)
Thursday: 5 Guys (bacon cheeseburger, all the veggies, no bun)
Friday: TBD

Sunday - Lobster Macaroni & Cheese, tossed salad
Monday - BLT's and homemade chicken soup
Tuesday - Roast pork, rice, broccoli, tossed salad
Wednesday - Grilled salmon, alfredo noodles, peas, tossed salad
Thursday - pot roast, potatoes, carrots, onions, mushrooms in crock pot
Friday - left-overs
Saturday - Chicken, stuffing, gravy, green beans and squash

Hello DIS friends!! I’m a long time lurker on this board but finally felt I should contribute.

We’ve recently begun the attempt to cut out packaged and processed foods…which leaves me gasping over the price of organic ingredients, spending a LOT more time in the kitchen making things from scratch, and really bare looking cupboards. :confused3

I’m still building up a reserve of foods with less (or no) additives and preservatives but I was really stumped when it came to making dinners since my usual standby’s ( packaged noodles, potatoes, canned gravy and bean etc) are no longer in the house.

I’ve been canvassing the internet for three weeks, trying to find recipes that don’t use these products so that I can still make the foods we love, only healthier. :faint:

I’m also trying to stick to my regular weekly food budget, so that I can continue to save up for the next Disney trip. :thumbsup2

Anyway, I do a big shop every two weeks and then just pick up milk, eggs and fresh produce in the in between weeks, so my meal plans go from Thursday to Wednesday…covering two weeks. As it’s Monday, we’re already a few days in but this is what I’ve outlined for the date range of September 20th to October 3rd:

Thursday-Rotisserie Chicken with stuffing, mashed potatoes and gravy, salad
Friday-Garbanzo Bean Stew (ended up being East Side Mario’s—DH had a really stressful week)
Saturday-Leftover chicken
Sunday-Shepherd’s Pie
Monday-leftover Shepherd’s Pie
Tuesday-Homemade Pizzas (using naan bread for the crust)
Wednesday—Bean and Rice Burritos
Thursday—Steak and baked potatoes
Friday—Turkey medallions with our last package of Lipton noodles
Saturday—Pasta Casserole
Sunday—leftover pasta casserole
Monday—Roast beef in the crock pot with root veggies
Tuesday—Roast beef dips
Wednesday—Chicken Fried Rice

OK this week is:

Sunday- BBQ beef sanwiches with potluck potatoes
Monday- Left overs
Tuesday- Beef and noodles
Wednesday- Meatloaf and potatoes
Thursday- Dinner out
Friday- Hamburger Helper

I'm trying to use what's in the freezer because I will be making my last car payment this Friday!

Well, I've changed things up already. We ended up going out for appetizers and drinks on Sunday afternoon, so none of us were up for lasagna. So, I saved that for Monday and we had spinach salad with eggs for dinner on Sunday.
Monday was the lasagne and a green salad (supper yummy!)
Today I'm making soup in the crockpot. I want to use up some leftover bits and pieces of veggies in the fridge
Wednesday should still be homemade pizza (assuming I get around to making pizza dough)
Thursday will be the salmon
Friday - Torteliini
Saturday TBD.

Wow- our thread is getting busy! ::yes:: The weather is getting cooler, so I think that makes cooking at home more appealing. :thumbsup2 Our dinner tonight:

Chipotle Chicken Breasts
Baked Potatoes
Steamed Broccoli

Here is our menu for the week:

Saturday: Roasted Chicken, mashed potoates, cranberry sauce, green beans, rolls, and no bake cookies for desert.
Sunday: Free night - whatever you wanted to eat because mom was tried from walking around the zoo for 6 hours. ;)
Monday: Chicken and noodles
Tuesday: Jumbalya, fruit
Wednesday: eat at football game (hotdog or pizza)
Thursday: roast, potatoes, carrotts
Friday: Cheeseburger pie
Sat: Brats, fries, cornpudding

I hope this is a good place to ask this question. We eat at home a lot and I'm hoping to find some good recipes on here.

I've also tasked our whole family with sticking to our budget. The kids also have a budget for school lunches so they will need to take lunch a few times a week at least. I'm really lost on what to pack for them though! The kids like uncrustables and my son likes chicken caeser salads and sometimes they like a cold cut sandwich - but what else??? They claim they 'like' the lunchables but I know they don't eat the whole thing and it costs as much as a lunch at school anyway.

What have you found for your kids school lunches that will not spoil and does not need to be heated up? And preferably healthy and definitely yummy?

Thanks!
