I have a question for my fellow dumpling lovers.

When I make chicken and dumplings I find my dumps (store bought or homemade) turn out mushy. They either disintegrate and ruin the whole dish or they're still slimy inside. :confused3

Here are a bunch of questions to consider: :scratchin

1) What recipe do you use?
2) Do you push them under the surface?
3) How big are your dumplings when you drop them in?
4) How long do you cook them?
5) Lid on or off?
6) Does using the crock pot change things?

I make two different dumplings. You can see both recipes on my blog. I find if you use Bisquick, the broth does get cloudy. I have been using this egg dumpling recipe with pretty good success. The broth needs to be boiling. The key is once you cover them, don't peek for 10 minutes. *(lid on) You drop them in and cover them. Do not mix or your broth will get cloudy.

Tonight is lemon chicken and rice
Wed. Turkey balls and pasta
Burgers and sweet potato fries
Tortellini
Chicken cutlets and rice
4 cheese lasagna with salad
Pizza for lunch on the weekend , I have the dough already made so that might come into play earlier in the week.
 
Mon.- Beef brisket w/mashed potatoes and green beans

Tue.- Beef stew and biscuits

Wed.- Ham steak, baked beans, broccoli

Thurs.- Sloppy joes, home made oven fried potatoes

Fri.- Pizza
 

Yesterday - Crab cakes, grilled shrimp, rice and green beans
Tuesday - Frozen ravs with peas and garlic bread
Wednesday - Fish tacos, coleslaw and corn
Thursday - Baked fish, mac and cheese, and mixed veggies
Friday - Grilled Chicken, pasta salad, broccoli
Saturday - Baked chicken (kraft coatings), mashed potatoes and green beans
 
Oh man, I haven't been to this thread in forever! I need to get in the swing of eating at home again. We have fallen into some bad habits. Ok off to the store I go.
Tonight is salmon with veggies, salad, and cous cous.

I haven't made them yet but I mentioned I was going to and my sister said she won't anymore because she has the same issue. I'll report my findings this week. Maybe I should cook the biscuits a bit first and then drop them in?

The recipe I have says to not stir at all and to allow extra cook time as all slow cookers are different. At this point the recipe calls for 40 minutes but I'll try up to an hour and a half and see how it turns out.

And definitely lid on. The steam will escape otherwise. So I guess you have to give them the full time allotted, check quickly, and then try again. Also, the dumplings are on top with a very little bit of the liquid over them, not shoved right into the middle of the chicken mixture.
 
Finally the weather is in the 60's-yeah! :cool1: So bring on the comfort food!

Tonight-Homemade chicken nuggets, green beans and mashed potaoes
Wednesday-Tuna Casserole with veggies
Thursday-Sheppards Pie
Friday-Chicken Qusidillas (still can't spell it!)
Saturday-Going to a wedding, so the kids get Pizza with the sitter!

Today (Tuesday) Mini baked corn dogs, onion rings, corn on the cob
Wednesday: Pulled pork sandwiches and sweet potato fries
 
A little late this week
Sun - Fried chicken, Raspberries/Blueberries, Roasted Broccoli
Mon - Manwich Mac and Cheese (like chili mac, but sweeter), Roasted Carrots, Grapes
Tues - Enchilada Chili (made this up on the fly from a beef enchilada soup recipe - was a cross between the two dishes - still working to make better:), Tortilla chips
Wed - Leftover Chili with Scrambled Eggs and Cheese in Tortillas, Blueberries/Rapberries
Thurs - Country Pork Ribs in Crockpot, Rice, Green Salad
Fri - Leftovers or Pizza
Sat - Sister's Reception

Thursday: Left over pulled pork sandwiches
Friday: Kielbasa, Pierogies, Fried Cabbage.
 
We had chili yesterday and today we are having pancakes and bacon. Tomorrow is chicken in crock pot with salsa and i'll add sour cream when we are ready to eat and serve on tortilla shells!!
 
cant remember if I ever came back to post that the crock pot lasagna was a hit and now people at work are doing it and everyone has reported loving it .

I did use the noodles you dont have to preboil but one of the girls just used the regular noodles and said it was good .

need you guys to keep them coming this week we did not eat out at all and I didnt buy lunch out at all . My Dh was at the station a lot this week and cheated buying lunch and dinner out for 3 shifts LOL
 
Here's our menu for the next 10 days or so:

Sat - We have a friends wedding to attend

Sun - Crockpot lasagna, salad

Mon - Meatballs, mashed potatoes, corn

Tues - Chicken lettuce wraps, rice

Weds - Dance night. I have a training over an hour away so DH and DD will grab dinner on the way to dance.

Thurs - Hamburgers, French fries

Fri - Breakfast burritos, fruit

Sat - DH and I are going out of town for the day to celebrate our anniversary. We'll eat out (Buca di Beppo perhaps).

Sun - Pineapple ham, crockpot cheesy potatoes, glazed carrots

Mon - Meatball sandwiches, left over cheesy potatoes, raw carrots

Tues - Italian sausage tortellini soup
