Hi Everyone! I love this thread but it just got away from me over the summer.. I have started the BL Fall Challenge and planning dinners helps me lose weight vs. eating out! so our menu is as follow.. this week Myself, C and Ky..
Yesterday - our moblie home park had a FREE BBq so we ate there!
Tonight - Ham Steak, boxed Mac and Cheese, Green Beans and 7-up Biscuits
Tuesday - C will cook, the boys will have MeatBall Subs, I'll just have some pasta with sauce and another biscuit after Zumba
Wednesday - Shepard's Pie and Crescent rolls
Thursday - C will cook, Chicken Tenders, Chicken Rice, Green Beans - I'll eat after Zumba
Friday - DiGiorno 3 Meat Pizza, Chips
Saturday - ???
Sunday - Beef Stew after Ice Hockey and (making more) 7-up Biscuits

Well I don't know but the 7-up biscuits were a giant mess -- SOOO soft and sticky that I couldn't cut them ended up just gobbing them into the pan and bet I had at least 1/4 of the dough stuck all over my hand and cutting board... they tasted ok not great .. oh well..

and well my DD is taking her first trip home from college tonight so on Sat night we'll be having her fave meal -- Barber frozen chicken keiv, stuffing, garlic noodles and green beans.. (i'll reheat the biscuits too)
 
I've been wanting to join in for a very long time. Now is the time!:cool1: I'm only going to record our dinners for the week. Most of these items are already made. Just need to take them out of the freezer.

Sunday: Baked boneless pork chops, stuffing,and corn/green bean mix.
Monday: Stuffed Peppers w/salad.
Tuesday: Bean burritos, rice
Wednesday: Pasta, salad, garlic bread
Thursday: Meatloaf, Hidden Valley Roasted Potatoes, broccoli and corn casserole.
Friday: Pizza, salad
Saturday Grilled chicken, baked beans, and corn on the cob

I jinxed myself by actually posting the weeks menu here. The only days that I followed was Sunday and Monday.
Tuesday: left over stuffed peppers
Wednesday: Chicken Quesadillas and rice
Thursday: Shepard's Pie

You may try dusting everything with flour (including the dough) next time. It makes it a whole lot more "workable". When DH and I got married sixteen years ago I made homemade biscuits every Saturday morning for breakfast...then Pillsbury came out with the frozen ones and I haven't made a homemade one since! :rotfl2:

So, we were supposed to have Enchilada Casserole last night...until I saw that you have to refrigerate it overnight before baking it.:crazy2: OOPS! We ended up having Hot Italian Subs last night and tonight we will have the Enchilada Casserole that is sitting in the fridge... :thumbsup2
 
Tonight we'll be having Easy Pleasing Meatloaf Easy Pleasing Meatloaf (family favorite in our house!) with potatoes (baked or mashed, not sure yet) and a veggie side.

Anyone have any favorite simple/budget-friendly recipes they'd like to share? Going to the market later to figure out the rest of the week's menu and need some fresh ideas. I know there's a lot of recipes in this thread, trying to go back a bit now, but obviously that's a lot of pages!

Just looking for any types of dinners, particularly few ingredient or staple-reliant standbys. Links to threads here or other sites, anything is greatly appreciated! :goodvibes
 
BBQ Veggie Turkey meatballs, Mash taters, lima beans. Made a double batch of meatballs and put the rest in the freezer.

Tomorrow will be finger food. Chicken tenders, onion rings, corn on the cob watermellon

Sunday Meatball subs, carrots sticks and ranch dressing

Mon. I will use left over meatballs to make spaghetti and have a caprese salad.

Tues. Ham with mac and cheese and green beans

Wed. Jimmy Deans ham breakfast skilllet, scrammbled eggs and toast.

Thur. Pork chops that have been marinated in italian dressing, grilled garlic potatoes, creamed corn

Thats all I have planned so far.
 
ok i am jumping on this bandwagon because our eating out is blowing the budget and making it hard to afford our vacation this decemeber. So here is our meal plan for this week.
Sat. rope sausage kraut and fried potatoes
sun. chicken pot pie
mon. veggie soup
tues. tomato soup and sandwiches
wed. leftovers
thurs. cheesy pork chop casserole
fri. steaks and potatoes
Hopefully i can stick to it this week. The 1st week is always the hardest and my hubby is out of town all week and I work 12's tues and wed. so we will see
 
Okay, so did some grocery shopping. Spent $65 on, at least, 4 nights of dinner, as in all ingredients for those 4 plus some things that can be incorporated into TBD dinners lol. Also got some staples that needed replenishing and a few snack items & drinks. That seems high for just 2 people to eat, but cheaper than what we'd spend eating fast food I guess.

So, in no particular order...

-Chicken Tortilla Bake
-Tricolor rotini w/ garlic bread
-Cheddar Jack & Bacon chicken w/ corn and potatoes
-Soft taco night!
-Cheesy Chicken and Rice Casserole

I would like to say thank you!! I have been lurking on this thread for a while. Looking to cut back on spending, and pay off debt. So starting in the kitchen among other things was where i began.

I starting readin all of the wonderful ideas you all came up with for streatching, and making the most out of meals, and one idea kept popping up a lot. the slow cooker ideas. Now I had bought a very teeny tiny one years ago, andnever used the darn thing. It wasn't something my mom or anyone else in my family used a lot to cook in. But after seeing people here make stew, pulled pork etc. I decided to open the box finally and just try it out.
Started with chicken in a pot. 2 thighs, 1 carrot, 1 celery cut up, salt and pepper, and 2 table spoons of water. My dd 13 is really picky...so i figured if she liked it (and how amazed i was at how easy it was, with minimal clean up) then i would consider getting a bigger pot and doing more with it. (new pot cost $19.95 bargan....
anyway, it was a hit! today i'm making pulled pork in the new bigger one i have, wednsday is stew. :cool1: I am so thankful for all of your suggestions..and this thread! keep up the wonderful job everyone!! :lovestruc

Then, from tomorrow and through next week we have:

Sunday: Roast Chicken with Roasted Vegetables and Stuffing
Monday: Peanut Chicken with Noodles
Tuesday: Summer Vegetables with Sausage and Peppers
Wednesday: Sweet and Sour Chicken (Crockpot) and Rice
Thursday: Leftovers of Sweet and Sour Chicken
Friday: Lime and Honey Glazed Salmon and Asparagus
Saturday: Steak, Baked Potato, and Salad
Sunday: Healthified Lasagna and Salad
 
I have been living off my freezer for about 2 weeks and was able to go to the grocery store on Friday. I had to buy meat this time so my bill was $111.00. I did save $30.00 in coupons though.

I bought a pork roast that I am freezing half and a huge package of ground beef I will also be freezing in portioned bags. This menu is out of order. But we will eat this sometime within the week:)

This is my meal plan for the week: Monday and Tuesday I have school 1-8PM
last night: steak sandwiches on French bread with French onion soup
today potato nachos
pulled pork sandwiches with cole slaw (crock pot)Monday
shrimp and veggie tempura with rice
meat loaf muffins and a baked potato

Dinner by DiGiourno (got a pizza for $1.50)
Wednesday dinner in Chicago. We are going to see Madonna:) I want to go to XOCO for lunch. Dinner will probably be at the United Center.
chicken fried rice and peanut butter egg rolls
and a marshmellow meringue pie is in our future this weekend too!

I have a ton of other crock pot recipes on my blog too;) One of my other favorites is crock pot mac and cheese. I plan on making crockpot beef stew this next week too.

Already having to make a change. On Tuesday we will be having Ham Steak, Eggs, and Toast because I have to meet with my group at 5pm and I don't know what time I will be home. So, I wanted something super easy and fast for that night.

Friday - we are going out for our 10th wedding anniversary.
 
We had a southwest chicken and rice bake. It was good, but I need to tweak it. I'm going to jot down a few ideas before I make it again.
