I hate to hear that about your DH losing his job! We will all have "how I survived" stories to tell when we finally make it through this horrible economy crisis. Poor DD...:sad1: I am sending lots of prayers and pixie dust your way for some unexpected blessings to come to you and yours!!! :hug:

Sunday - oven fried chicken, gravy, rice and corn
Monday - Beef stew in the crock pot
Tuesday - Baked stuffed cod, rice, peas
Wednesday - oven fried pork chops, stuffing, green beans
Thursday - Roast beef, baked potates, mixed vegetables
Friday - Mexican chicken, nachos, tossed salad
Saturday - Hamburgers, hot dogs, macaroni salad, coleslaw
 
Another weeks menu:

Mon - carne guisada, brazilian white rice, sweet peas
Tues - chicken fried hamburger steaks, mashed potatoes and gravy, corn
Weds - pulled pork sandwiches, coleslaw
Thurs - I have a meeting so it will be leftovers or soup and sandwiches
Fri - tostadas, guacamole salad, mexican rice
Sat - grilled new york strip steaks, baked potatoes, corn on the cob
Sun - havarti chicken, yellow rice, salad

I am making crock pot scalloped potatoes and ham today. I will be gone all day til 6:headache:
 
Gosh some of the menu's make me want to drool!! I definitely need to expand my recipes but I am one of those that needs simple ones!!

Here is our tenative menu:
Mon- Cheesy Chicken and Rice bake with gbeans and a fruit
Tues- Stir Fry
Weds- Cornbread Casserole
Thurs- BBQ Pork Chops with Rice a roni and peas
Fri- Pizza for the kids and Date night for the Hubs and I (B1G1 @ Outback= $14 for both of us!!)
 
Hi Gang - our week is busy with kid activies (DS has LAX prac 4 -6 everyday and DD has Softball prac everyday 3:30 - 5:30ish)

Our menu looks like this :
Monday - Tacos, both beef and chicken and both hard and soft
Tuesday - Homemade chicken tenders, garlic noodles (packaged) bean
Wednesday - Scrambled Eggs, toast, hashbrowns and bacon + fruit for me and DD
Thursday - bowties with homemade meatsauce, garlic bread and cut veggies
Friday - Steakhouse marinaded flank steak, steak fries, bean fries
Saturday- Subway or italians from our local store
Sunday - homemade Pizza

We had a busy weekend, so I didn't get to post my weekly menu. Here it is:

Saturday-
Homemade Sweet and Sour Pork
Steamed Rice
Broccoli with Cheese Sauce

sunday-
Corned Beef Hash
Steamed Cabbage

Tonight-
Tuna Noodle
Green Peas

Tuesday-
Jambalaya with Smoked Sausage
Roasted Corn

Wednesday-
We have a church home group fellowship. I only have to take drinks.

Thursday-
Grilled Chicken Legs
Baked Beans
Corn on the Cob
Fried Potatoes

Friday-
Big Ole Pizza from Aldi

*How I make Mexican Rice...I can try to explain. I had a friend who taught me, no exact recipe.

Put a little oil in a skillet. Brown some rice and onion slivers together. When that is almost browned toss in some minced garlic until fragrant. Add an appropriate amount of water, about a tablespoon plus of tomato sauce, 3-4 chicken boullion cubes, and salt and pepper to taste. Simmer until the rice is tender.

Sun/1 Steak, Parmesan Tomatoes, Salad
 
We are cleaning out the fridge this week...before we head to Orlando Thursday morning!!! I'll be having Earl of Sandwich for Thursday lunch!! :woohoo:

Monday- Mexican pizza's, salad
Tuesday-Ham, turkey, swiss subs, cole slaw and potato salad
Wednesday-Chicken enchiladas, salad
 
This week's menu

Tonight- Breakfast for dinner, French toast with sausage and fruit salad
Tuesday- Shredded beef sandwiches with sweet potato fries and roasted brussel sprouts
Wednesday- Chicken paprikash with homemade speatzles and a veggie
Thursday- Crock pot potato and corn chowder
Friday - Pierogies with salad
Saturday- The Pioneer Woman's Beef with snow peas
Sunday- Pork chops with hash brown casserole, glazed carrots, and salad
 
Switching things around on our menu!! Tonight we are doing French Toast Casserole (already prepped and soaking today) with bacon and fresh fruit Tomorrow will be Chicken Parm. with a fresh salad and pasta on the side!!

Tonight we are having the shredded beef sandwiches but I am changing up the sides. I am now going to make fried zucchini sticks with apple slices.
 
Monday we had rigatoni w/vodka sauce, salad and garlic bread.
Tonight we are having Rachel Ray's sloppy joes and broccoli slaw.
Wednesday - BLT's, salad
Thursday - kielbasa, red potatos or pierogies
Friday - homemade crabcakes and a side (to be determined)
Saturday - eat out
Sunday - undecided
 
- On Monday we had a roasted chicken with mashed butternut squash

- On Tuesday I used left over chicken with some bbq sauce, pizza dough I had previously made and froze and made a bbq chicken pizza

- Today we are going to the community dinner at church - corned beef dinner theme...I'm bringing a corned beef and I'll cook some potatoes with it

- Thursday I'm going to make a big steak salad (pioneer woman), I have frozen flank steak

- Friday I'm going to make hot and sweet drumsticks with mashed potatoes

- Saturday my cousin is having a 1 year bday party for her daughter, I have to
work, I'm hoping I'll be able to eat there before going to work

- Sunday...?? Maybe grilled cheese and soup
 
I am making:

Chicken Nuggets
Fries
Apples Slices

...for the kids. DH and I have a church small group fellowship tonight and I just have to take drinks.
 
we are having cabbage & stewed squash tonight, all veggies!
tomorrow night is pizza
