Tonight we had home made mac and cheese with a salad. For breakfast I ace everyone a spinach and mushroom omelette yummy and healthy :thumbsup2

Tomorrow will be a beef roast with mashed potatoes and garlic carrots. I will be making for my self roasted sweet potatoes with black beans

Well my class ran later than expected so I stopped at Wendy's for dinner. I am just too tired to cook.
 

We are having red beans and rice for dinner. I added some diced ham. Tastes wonderful. I made cornbread to go with it. I use cream style corn and sour cream in the corn bread. Makes it super moist. For dessert we'll have an angle food cake with strawberries and cool whip.

Well, our exam got posted online and class is canceled due to the potential for severe weather this evening. He didn't want us traveling if it got bad. We are expecting high winds, heavy rain, large hail, and possible tornadoes so I am very happy to not have to worry about traveling. Gonna curl up with the weather channel on!
 
Tonight we are having
Tuscan vegetable soup w/homemade crusty artisan bread and
leftover buffalo chicken egg rolls (wierd combo, but don't want to throw
them out).
 
Well we ate lunch out today at the cheesecake factory but we had a gift card to pay for most of it I did really well ordering off the healthy menu had a shrimp wrap with lots of veggies. Super good.

Ever since my baby was born I have been eating gluten free mostly fruit and veggies rice beans and nuts I gave up diet soda and coffee. Hopefully it's a lifestyle Chang for me. I also gave up meat.

Any ways we had a beef roast with mashed potatoes and carrots. I had a wonderful salad.

We are having salmon puttanesca over spinich with gnocchi (I don't like it but dd does-tastes likes balls of dough to me), and Italian bread freshly made with some bread dipping oils. I don't post, but I plan to start. We almost always eat at home, and I do read here daily.

Tonight will be Orange Chicken and Rice. I am reducing the amount of chicken (16 oz down to 12 oz) in the recipe and adding bell pepper, onion, snow peas, and broccoli to increase the nutrients while decreasing the calories per serving (but still keeping a good sized serving). When I log it into MFP's recipe creator, I get 228 calories per serving with 4 servings in the whole thing (not counting the rice).
 
We've been sticking to the menu I posted a few days ago, haven't eaten out except for lunch today, I helped in dd's kindergarten class so I took her out for lunch at Runza. :lovestruc. Tonight is finally the shrimp fettucini, I ended up switching that night for some frozen chicken breasts w/ Mac & cheese because it ended up being just dd12 & I for dinner that night. After this week wrestling, the play, & basketball will all be over:banana:.

Small amendment to this weeks menu. We decided NO eating out or take out until Disney. Both from a budget standpoint but more importantly because going out to eat on vacation isn't as fun or special when you've been doing it right up until vacation. At least that's how we see it.

Three notable exceptions. Ordering pizzas for ds's birthday party. Getting Thai take out for dd's birthday (have a 50 dollar gift card) and going out to our favourite restaurant for husbands birthday (have 75 dollar gift certificate).

All of their birthdays are the same week. Which is murder on any sort of budget but this is a pretty good plan.

So..on to the menu.
Friday: Wraps full of veggies and other stuff
Saturday: Breakfast for dinner with smoothies
Sunday: Potato soup and biscuits and salad
Monday: Having company for spaghetti and meatballs, salad and garlic bread
