Tonight we are having sloppy joes with chips and fruit. I have a meeting at 6pm so it is quick and easy.

Tomorrow I am working at the primary election, so mom is going to make crock pot vegetable beef soup so I will have dinner ready whenever I get home.

I made scalloped potatoes I usually make in the crock pot. You can bake them as well. I Blanche the sliced potatoes for about 5-10 minutes before in both ways.
The crock pot version you can set to cook for up to 8 hours.

Easy Pleasy Scalloped Potatoes

1 can cream soup of your choice
1/2 cup sour cream
1/2 c shredded cheese
8-10 potatoes sliced
salt and pepper
1/4 cup milk

Blanche the potatoes and drain. Add to the crock pot or baking dish. Stir together the soup, milk, cheese, sour cream and salt and pepper. Bake at 350 for about 25 minutes. (Potatoes will be partially cooked from Blanching) Or, set the crock pot on high for up to 8 hours. You may top with additional cheese.

I love seeing the recipes. They look really good! Thank you guys for sharing them. :)

We're having ground turkey tacos with all the sides tonight.

i now make my potatoe soup with boxed potatoes au gratin and it is easy and delicious. i used to peel my potatoes, etc., not anymore honey! it's really good too. we are having beef stroganoff in the crockpot tonight. i will look the recipe up for the soup and post it!

Catching up:)! Fri we had tuna melts, chips & apples; Sat was homemade chicken with rice soup, & last night we had a planned-for family dinner at Applebees, for sub-par food for the 5 of us it was $56, with no drinks or dessert! It is getting so expensive for the whole family to eat out at a sit-down restaurant, it makes eating at home look even better:thumbsup2. The rest of the week:

Baked chicken, baked potatoes, asparagus

crock pot breakfast casserole (thanks Charming!)

Baked beef round steak w/ onion, mashed potatoes, veggie

Baked penned pasta, salad

Scrambled eggs, ciabbata rolls, clementine's (this is for tonight)

Waiting on the a/c man and I sure don't feel like cooking. Or even planning cooking. Which is so unlike me. I have spent all day cleaning house though and I am just ready to sit down and do absolutely nothing. I have ground beef thawed out, so it will be beef for dinner tonight.

Mon - Beef and macaroni with stewed tomatoes, garden salad with Ranch, breadsticks or whatever bread DH brings home.
Tue - crispy beef tacos, guacamole salad, chips
Wed - dirty rice with hamburger, garden salad with Ranch
Thur - Happy Mountain, steamed jasmine rice, garlic broccoli
Fri - Baked Potato Soup, breadsticks, garden salad with Ranch
Sat - salisbury steak, mashed potatoes with brown gravy, sweet peas

4 Chicken Breasts (boneless, skinless)
1 pkg cream cheese
2 cans cream of chicken soup
1 packet of dry Italian dressing mix

Throw it in the crockpot all day, and serve over bowtie pasta. Yum!
