No idea for tonight. I had not planned to be home, but we are under a severe weather warning for today and tonight (East Tennessee). Some will depend on when the storms are coming through and if we have power. Sorry, I do NOT do bad weather well and am really scared and anxious about it. Hopefully the mountains break the storms up enough to keep us from getting the really bad stuff.
 
Yep. middle Tennessee is under severe storm warnings too. I am leaving work and picking my kids up from school at noon to head home where it's safer.

Be safe hun... the storms are already starting to get really bad and are only supposed to get worse. Tornado Warning for the Cookeville area atm...

I made a Chicken Tortilla Soup yesterday, it was soooo good, I wanted to share the recipe with you guys.

Chicken Tortilla Soup
2 can chicken broth
2-3 whole chicken breasts (boneless)
2 cloves garlic, minced
1 teaspoon cumin
2 teaspoons chili powder
salt & pepper to taste
1 (14.5 oz) can diced tomatoes with green chilis (I used Rotel)
1 (15 oz) can black beans, rinsed & drained
1 small bag frozen corn kernals
1 (6 oz) tomato paste
shredded cheese
tortilla chips (crunched up)
sour cream (optional)
cilantro (optional)

In a slow cooker, combine everything except the cheese, sour cream & tortilla chips and cilantro. Cover & cook on low for about 4 hours. Remove chicken and shred with a fork. Put chicken back in slow cooker, mix it all up, and cook for an additional 1-2 hours on low.

Dish up the soup, top with shredded cheese & tortilla chips. Additional toppings of sour cream & cilantro if you like.
I had mine with just shredded cheese and about 4 tortilla chips crumbled up. DH added sour cream on top of his.

We had enough for leftovers today. I just heated some up for lunch and it was just as good as last night. :thumbsup2
 
I have a vegetarian mexican soup in the crock pot for tonight. Super easy, and it's a family favorite!

16 ounces crushed tomatoes
can of mild rotel
can of black beans
can of garbonzo beans
2 cans of Progresso Minestrone

Then I just add whatever veggies we have leftover from the week. I also throw in a handful of pasta of some sort. We eat it with tortilla chips.
 
Vegasnative - About the Tortilla soup, do you put "uncooked" chicken in the crockpot or do you use cooked chicken. This recipe sounds great and a change from regular ole chicken soup.
 
Well we survived the storms. We had some quarter sized hail, but no damage to house or cars. Friends just one street over had softball sized hail. We were blessed.

Grocery day today. Our menu this week:

Tonight-
Italian Baked Chicken
Fettucini Alfredo
Steamed Broccoli

Sunday-
Savory Beef (crock pot)
Hashbrown Casserole
Garden Peas

Monday-
Jambalaya with Smoked Sausage
Roasted Corn

Tuesday-
Cheeseburgers
Fries
Diced Cantaloupe

Wednesday-
Sausage Gravy
Biscuits
Scrambled Eggs
Grits

Tonight was chicken and gravy with vegetables over mashed potatoes.

Tomorrow is taco night with tossed salad.

I'll figure out the rest of the week after I go shopping tomorrow.

Loaded Baked Potato Soup

Ingredients

3 bacon strips, diced
1 small onion, chopped
1 clove garlic, minced
3 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
3 cups chicken broth
2 large baked potatoes, peeled and cubed
1 cup half-and-half cream
1/2 teaspoon hot pepper sauce
Shredded Cheddar cheese
Minced fresh parsley

Directions

In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.
 
Tonight we are having baked chicken wings with homemade potato salad and roasted brussel sprouts
 
Tonight will be Pork Chops with Balsamic Peppers and Roasted Green Beans.

My family loves baked potato soup!! Its so easy to make, yummy, and pretty good for you too! Its suck comfort food... great for a cold day!
