I have to squeeze shopping in sometime this week. I am guessing Wednesday. This is what I have made so far this week and my plans through Wednesday.

mahi mahi with pineapple salsa
beef chimichangas with a white sour cream sauce and rice(yesterday)
bowtie pasta with lite alfredo sauce and chicken today
crockpot sofrito chicken
build your own nacho night for my Tuesday class night
breakfast for dinner
crock pot tortilla soup
 
My week of madness is finally OVER!!! I am soooo glad. Here is this week's menu...

Saturday-
Chicken Casserole
Steamed Rice
Sautee'd Whole Green Beans

Yesterday-
Italian Beef
Twice Baked Potatoes
Salad

Tonight-
Baked Cheese Ravioli
Salad
Garlic Toast

Tuesday-
Beef and Cheese Enchiladas
Chips and Salsa

Wednesday-
Chicken Caesar Pita Pockets
Chips
Grapes

Thursday-
BBQ Ribs
Roasted Red Potatoes
Hot Cinnamon Apples

Friday-
Hot Dog Wraps
Fries
Diced Cantaloupe

Jumping back in because we have been SO off track the last few months. I finally went out this weekend and did a serious shopping run - far too many weeks of stopping for things on the way home (and spending way too much money!)

This week:

Tonight:
Frozen tortellini, red sauce
italian sausage for DH and I
salad
garlic bread

Tomorrow:
(Just DD and I)
chicken tenders
Homemade oven fries (red potatoes were on sale $1 for a 3# bag!)
corn, probably

Wednesday:
I'm the only one home, so I'll just scavenge.

Thursday:
Family dinner out with my MIL

Friday:
Hamburgers
Cheesy rice
salad


Saturday:
Homemade chicken tenders
mashed potatoes
salad
stuffing for DH who doesn't like potatoes
corn, because I like mixing corn into my potatoes ;)
Thinking homemade biscuits

Sunday:
Ham steak but I dunno what with it yet. (We have several options.)
 
It was about 9:30AM and I realized I had no idea what we are having for dinner. I am making crockpot Arroz con pollo which is essentially the sofrito chicken I was talking about in my weekly menu. I still browned the chicken but just added all the sauce ingredients to the crock pot. The only difference is I am not adding the rice. The rice will be made in the rice cooker and added at the end. I will post the results later tonight on my blog.
 

This week in no particular order:

- rotisserie chicken
- black beans and rice w/ corn bread
- chicken enchiladas
- tacos made w/ ground turkey
- pizza

I have the veggies set. Plenty of those, and dessert items. It's the main course that can be the bugaboo for me.
 
This weeks menu:

Chicken parm with spaghetti
Steak Fajitas
chili
brown sugar chicken
pork and sauerkraut
 
Tonight I am using leftover chicken (I cooked up a huge chicken in the crock pot yesterday and used half of it for the chicken and dumplings) for shredded chicken tacos. We have hard taco shells plus lots of toppings.

The rest of my week in no particular order is:

spaghetti and meatballs
The lady and sons chicken pot pie
hamburgers with sweet potato fries
homemade baked macaroni and cheese
ham slices with scalloped potatoes
 
Hi all! It's good to be back. It's been awhile for me since being here, but life got in the way. But finally I have time to get back in the kitchen and we can eat more than soup, sandwiches, salads, and burgers on the grill. Shopping day was today and I stocked up, so it will be good eating at our house this week. Hubby sent me a text earlier saying he had missed my cooking and is looking forward to tonight's meal. Awwww how sweet.

Sun - We had cream of tomato soup and cheese sandwiches. I worked so DH cooked.
Mon - beef and cheese lasagne, baby spring mix salad, toast with garlic seasoning
Tues - roast beef stuffed shells, garden salad with Ranch dressing, herbed corn
Weds - cheeseburger pizza, basil and feta pizza
Thurs - chicken and yellow rice casserole, green peas, mixed fruit
Fri - cheese enchiladas with chili gravy sauce, guacamole salad, tortilla chips and salsa
Sat - barbecued beef ribs, grilled corn on the cob, cole slaw
Sun - chow mein noodle casserole, mixed fruit

*On this one I double the rice and use half the onion called for, also I cook some garlic and ginger in with the meat and add in a can of chop suey vegetables like bamboo shoots, water chestnuts, and bean sprouts.

Tonight we had chicken and rice with salad and green beans

Tomorrow maybe a roast.
 
I am leaving in a few mintues to attend a training class downtown to work the election booth next week. I have no clue how long I will be down there so dinner will be easy tonight, spaghetti and meatballs.
 
Here's an easy one we had last night that was yummy, it's a barefoot contessa adapted recipe

1/2 cup good EVOO
9 garlic cloves chopped

heat the oil and add the garlic for like 30 seconds- really you are just warming it don't burn it!

Take off half a cup of white wine, zest from one lemon, Juice from that lemon, 1tsp oregano, 2 TBS of fresh thyme(which I had but couldn't find so I used dried and less of it) salt and pepper

Pour that into the bottom of a 9x13 pan

Lay boneless skin on chicken breast on top(I used BONE IN SKIN ON THIGHS because they are cheaper) Sprinkle with salt and pepper drizzle olive oil

Cook for about 30 mintues

My thighs took 40 minutes. You want the skin to be crispy.

Serve with rice.

Class night tonight so nothing that awesome... my "dinner" will be:

Flatout Wrap Pizza: Sundried tomato wrap with onions, bell pepper, spinach, turkey pepperoni, mozzarella, and feta.
 
Tonight is nacho night because I have night class tonight. I think the DH can manage to brown ground beef without burning the house down!
