Love this thread! It is helping me make plans and lose weight!

The website is one of my favs there is a GoodFood magazine published every month over here i love it

Lily - The recipe is from Gordon Ramsay here it is:

Ingredients

4 red snapper fillets, about 100-120g each.
Sea salt and black pepper.
2 tbsp vegetable or groundnut oil.
Rucola Salad

For the sauce:

1½ tbsp vegetable or groundnut oil.
4 long red chillies, deseeded and chopped.
6 garlic cloves, peeled and chopped.
4 spring onions, trimmed and finely sliced on the diagonal.
2 tbsp lime juice.4 tbsp tamarind paste (or lime juice).2 tbsp soy sauce.
2 tbsp fish sauce.
2 tsp palm sugar (or soft light brown sugar).
2 tbsp water .

Method
For the sauce, heat the oil in a saucepan over medium heat.
Add the chillies and garlic and stir frequently for about 1-2 minutes.
Add the rest of the ingredients, stir well and simmer gently for about 5-10 minutes until the sauce thickens. If it thickens too much, add a touch more water to thin it down.
Season the red snapper fillets with salt and pepper.
Heat the oil in a non-stick frying pan. Fry the fish fillets, skin-side down, for 90 seconds until the skin is light golden brown and the fish is cooked two-thirds of the way up. Flip the fish over and cook the other side for about 30 seconds just until the flesh turns opaque and feels firm.
Season the Rucola (Rocket salad) with virgin olive oil, Balsamic vinegar, salt and pepper​

OK, I'm giving it a shot. I always get good recipe ideas from ya'll!

Tonight we are having crockpot buffalo chicken dip and salad. Pizza for the kids.
Tomorrow DH cooks b/c I work 12 hours.

No particular order for next week:
Chicken pot pie
The Duggars tater tot casserole with green beans
Creamy baked spaghetti someone posted on here with salad and garlic bread
Pizza and salad (usually our Friday night go-to)
Chicken and Rice with a salad
Tacos
Misc meal made by DH on my work night

Shoo! Feels good to have a plan and all the groceries to go with it!
 
My sister has a whole wheat pizza dough recipe that she got from a 40 year old bread book at my parents. I finally got it from her and made it tonight. WOW. A giant thumbs up from everyone in the family!!!! It will be something we make a lot. It's a make ahead or weekend recipe because you do have to let the dough rise for 45 minutes, and we had to chop veggies and cook the chicken and sausage for the pizza. It was a huge hit, and I got to use my new Kitchenaid stand mixer :thumbsup2

ETA, Tomorrow is family movie night. We'll be having baked potato soup, salad and crescent rolls.
Tomorrow morning I will edit and put in my menus for the week.

Yesterday I was fighting a cold and ended up taking a nap in the late afternoon, so we had leftovers last night. Tonight we are having the chicken stir fry
 
Healthy diets and I don't like each other. I love the stuff I grew up on. Not that my mom fed us junk or anything, but it was our era, Tang and Koolaid were the drinks of choice, Chef Boyardee pizza, boxed macaroni and cheese, and Doritos. So switching to a healthy whole grain, lots of veggies and fruits and less meats and sugar, well... it is a battle, as I want the things I am used to eating and so does hubby. So this week is still using up things we have on hand and getting that pantry emptied out, meaning it won't be the healthiest of choices.

So today, Sun - chow mein noodle casserole, garlic stir fried green beans, egg rolls
Mon - chicken biscuit bake or chicken pot pie, fresh fruit salad
Tues - Texas corn chowder, texas toast
Weds - spaghetti and marinara meat sauce, garlic toast, salad
Thur - build your own crispy beef tacos, beef burritos
Fri - cajun baked chicken, red beans and rice, green beans
Sat - grilled jalapeno and cheddar burgers, salad

Well DH decided he is going to lose weight....so he went out yesterday and spent $50.00 on fruits and veggies for the week. I'm glad he's looking at healthy eating but there is no way he will use all that before it rots so towards the middle of the week I will probably blanch some of the spinach and put it in the freezer and I am incorporating more fruits and veggies into everyone's diet. The kids are actually better than DH they will eat a wider assortment of fruits than him anyway.

I usually cook pretty healthy with the occasional junky meal from time to time so we'll see how he does.

We eat big lunch on Sunday, oven baked chicken, salad (of course) baked butternut squash and probably applesauce. I am putting a corn beef in the oven to slice up for the kids lunch this week.

Dinner will probably be wedding soup with lots of veggies and squash rolls I make with lefover squash. Mmmmmm.

Tomorrow night will be marinara sauce with beef braciole, salad and a pasta of some sort. Later in the week I will use the leftover sauce and throw in some frozen shredded zuke and make baked ziti.
 
can you guys post your broc.cheese soup and corn soup recipies?

I googled & used a Panera Bread broccoli cheese soup recipe, it was not my favorite, though. I used my immersion blender & I think i pureed it too long, we didn't love the consistency. I did not have a good week last week. I got take out twice. I usually get take out about once per month. So for this week I still have stuff from the freezer that I planned for last week. At least this will be a low grocery week.

In no order...

grilled steak

crock pot stew

pizza

breakfast for dinner

lasagna

Then I am out of town for the weekend so no cooking!
 
I googled & used a Panera Bread broccoli cheese soup recipe, it was not my favorite, though. I used my immersion blender & I think i pureed it too long, we didn't love the consistency. Tuesday:
Beef Stew with rolls

Wednesday:
Chicken with roasted veggies and angel hair pasta

Thursday:
Breakfast casserole with fruit smoothies

Friday:
Ham slices with scalloped potatoes

Saturday:
Tortellini meatball soup

Sunday:
Chicken and dumplings
 
So, I ended up staying home today because I wasn't feeling well. As such I made the Patty Melts and fries. It was really good! I was surprised as to how much I enjoyed them.

So, next week will change a little bit...

Monday: Skinny Baked Chicken Parmesan, Spaghetti, and Cucumber and Onion Salad


Wednesday: Blackened Fish Sandwiches with tzatziki and some sort of vegetable (whatever looks good in the freezer section)

Friday: Something from the freezer section or leftovers.

Saturday: Healthy, Homemade Chicken Noodle Soup and Crackers
 
It is a fun week for us. My sister is visiting from out of town with her kids, my ODD last days home from college, National Championship game and a night at the Great Wolf Lodge with my DS3.

Sunday: Jamabalya, buttered corn

Monday: National Championship Game-PaPa Murphy's B1G1 pizza, veggie tray

Tuesday: chicken quesadillas, spanish rice and beans

Wednesday: Ham slices, gourmet macaroni and cheese, green beans and cornbread.

Thursday:Chicken Pasta Ceasar Salad

Friday: Spagetti, salad and garlic bread

Saturday: Baked Pork Chop rice casserole, peas, fruit and biscuits
 
I need to get back on track - we ordered take out 3 times this weekend.....

so did my grocery shopping today, my meal ideas for the week:

jambalaya (with kielbasa) and corn bread
spaghetti w/ meat sauce, cucumber tomato salad, garlic bread
Teriyaki chicken with ramen noodle and veggie stir fry (sort of like lo mein)
ham, au gratin potato and green beans
bean burritos
grilled ham and cheese with fries or baked beans
 
:hippie: actually i live in the buffalo, ny area. we are right across the boarder from fort erie ontario. they opened a ton of tim hortons in our area. i love them too but infortunately my pocket book doesnt!!!

Oh wow, lucky you!!! We are close to the Canadian border too, but no Tim Hortons here, bummer. Well, next time you go, have an iced cappacino for me! ;)

First time I've seen braciole here! MIL made it last night using beef and another one using pork. It was so good. I've never made it before, do you have a recipe please (MIL doesn't).

I love how you are going to put zukes in your baked ziti!
 
Ok.. time to get down to business and plan this weeks menus. We always manage to resist the dreaded take out trap when I make a Sunday night menu and have a plan. So here goes.

Monday- Burgers, (Veggie and Meat), Baked Fries, Salad

Tuesday- breakfast for dinner.

Wednesday- Edit, going to sisters for dinner. She's making risotto and pan roasted vegetables.

Thursday- Wraps (refried beans, ground beef, cheese and various veggies in whole wheat wraps)

Friday- ds's favorite. Shepards pie

Saturday- Potato Soup and Salad, crescent rolls or biscuits.

Sunday- Homemade Pizza.

Other than milk and bread and a few veggies, I shouldn't have to shop until next Sunday. Still trying to put a dent in the freezer items.
