Sorry if this has been recently posted but I couldn't find anything else. Does anyone have any easy summery dessert ideas? I have found some online but would rather have recipies that I know people tried and liked. I am in charge of dessert for Fathers Day this year and I want to try something new. I don't want something that is too labor intensive or that needs 100 different ingredients. TIA for all suggestions.
 
Simple, but tastes good.

Just get the 6 pack of the small pastry cups

Fresh blueberries and strawberries (half the strawberries)

Place fruit in the cup and top with whipped cream.
 
We love blueberry dump cake. And yes, it's like literally just dumping the ingredients in!


BLUEBERRY DUMP CAKE

2 1/2 c. crushed canned pineapple, undrained
3 c. fresh or frozen blueberries (if frozen, thaw)
3/4 c. sugar
1 (18 1/2 oz.) pkg. yellow cake mix
1/2 c. butter, melted
1 c. pecans, chopped (optional)

Spray 13x9 baking pan. Add the following in layers: undrained pineapple, blueberries, sugar, and dry cake mix. Do not stir. Drizzle melted butter over cake mix; sprinkle with pecans. Bake at 350 degrees for about 45 minutes. Serve warm from the oven with vanilla ice cream or whipped cream!:goodvibes
 
Get a box of rectangular ice cream sandwiches and a tub of cool whip. Unwrap the sandwiches and layer the bottom of a 9 x 13 pan. Frost with the cool whip. Freeze until ready to serve. SUPER simple but so good.

My cousin spreads cherry pie filling over the sandwiches before frosting with the cool whip.

You could sprinkle the top with sprinkles, chopped nuts, chopped candy bars, etc. for a little crunch.
 

Oreo Ice Cream Cake. Easy to make, just need to make it a day ahead so it can freeze.

Oreos (crushed fine), you should need most of one package.
1 1/2 gallon container vanilla ice cream (try to get one in an old fanshoned cardbord "box", if you can, it's easier to deal with)
1 container cool whip (you'll need one of the larger sized tubs)
1 can Hershey's sryup
9x13 or similar sized pan (mom always used metal, not sure how glass would work)

Use crushed oreos as a bottom crust, pushing down to make firm. Take ice box completely appart and slice ice cream into slices of roughly equal thinkness, and place in pan in a single layer (if you have a tub of ice cream, just do your best to make slices) taking care that there are some small gaps between slices. Take can of syrup and pour all over ice cream layer (some of the syrup will soak down between the seams in the ice cream, this is a good thing, it gets into the crust this way), you'll use most if not all of the syrup. Take cool whip and "frost" the top of the "cake", make it a good 1 inch or more in depth. Take some more crushed oreo and sprinkle over top. Cover with foil, freeze overnight, and enjoy!

Melt semisweet chocolate- dip the strawberries in using the stem and then place them on wax paper (on top of a cookie sheet) and then put them in the fridge to harden up. Doesn't get much easier than that!

:thumbsup2 you can also roll the strawberries in sugar first, before dipping in chocolate. A local candie shop does this. After a few hours, the strawberries and sugar make their own "juice" inside the chocolate shell! :goodvibes
 
Trifle--

Cut up an angel food cake or a pound cake into cubes

Make instant vanilla pudding or buy the pre-made cups

Wash and cut strawberries or just gently wash raspberries

Layer the cake cubes, cool whip, fruit & pudding in any kind of clear bowl or baking pan;
top the bowl with more cool whip and serve cold. Delicious!
 
Easiest dessert ever

ONE - PAN EASY CHOCOLATE CHIP CAKE

1/4 c. oil
1 pkg. Deluxe Devil's food chocolate cake mix
2 eggs
1 1/4 c. water
1 box (sm.) instant chocolate pudding
1 (8 oz.) bag chocolate chips

Preheat oven to 350 degrees. Pour oil into a 9 x 12 inch pan. Tilt pan until oil completely covers bottom. Pour the remaining ingredients into pan. Mix thoroughly, until smooth and all dry lumps are gone. Level the mixture in pan and bake for 35-40 minutes at 350 degrees. Test for doneness by inserting toothpick in a few places. (Keep in mind, that toothpick could come out chocolaty if you happened to poke one of the many chocolate chips. This is why a few pokes might be necessary.) Let cool slightly, sprinkle with powered sugar and enjoy (knowing you have only one dirty spoon and one measuring cup to wash!).
 
Eclair Cake

Always a must for our family get togethers :goodvibes Especially since it can sit out on the table for a couple of hours and still be cool enough to eat.

Ingredients:

2 (3.5 ounce) packages instant vanilla pudding mix
1 (8 ounce) container frozen whipped topping, thawed
3 cups milk
1 (16 ounce) package graham cracker squares
1 (16 ounce) package prepared chocolate frosting

Directions:

In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.

Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.
 
My stand-by is Magic Cookie Bars.

Crushplain graham crackers into crumbs and combine with melted butter until crumbly. Press into bottom of a 9x13 pan to make a crust and bake at 350 for 5 mins. Allow to cool. Then pour one large can of Sweetended Condensed milk over top of crust, then layer one bag of sweetened coconut, one bag of milk chocolate chips, one bag of butterscoth chips and one bag of crushed pecans over milk. Bake for another 15 mins at 350.

The kids in our neighboorhood go gaga for this and ask me to make it at every gathering we have. Simple and delicious!

I do this every summer and it's always a hit. I do 2 layers of ice cream sandwiches with cool whip in between and on top and then I pour a bottle of Magic Shell over it, let it harden for a few minutes and then freeze
 
3-Layer Pie

Ingredients: box of instant pudding (any flavor), tub of Cool Whip, store-bought graham cracker crust

Preparation: Follow the instructions on the pudding box, then seperate about 1/3 into a bowl. Spread the 2/3 into the crust and put it in the refridgerator. Add about 1/3 of the Cool Whip to the pudding left in the bowl, and stir just until it's all one color. When the bottom is a little set, add this layer to the pie, and put back in the fridge. When that's set enough, add the rest of the Cool Whip as the last layer, and refridgerate again until you're ready to serve it.

Our favorite: Lemondade Pie

Graham cracker pie crust

1/2 cup of powdered lemonade mix (pre-sweetened, like Countrytime)
1 can sweetened condensed milk
1 tub of Cool Whip

Mix together lemonade mix and sweetened condensed milk. Add Cool Whip. Pour into pie crust. Freeze.

How easy is that? and YUM. I like mine a bit more tart, so I use closer to 2/3 cup of the lemonade powder.
 
Eclair cake...takes 10 minutes total to make!

2 boxes french vanilla pudding
1 tub cool whip (french vanilla if you can find it, but regular is fine)
1 Box regular graham crackers (NOT cinnamon)
1 tub milk chocolate frosting


Prepare pudding according to box, let set.

Once pudding is set gently mix in the tub of cool whip until well combined.

In 9 x 13 cake pan, lay down a layer of crackers, spread half of pudding mix on that, another layer of crackers, rest of pudding mix, another layer of crackers (like your making lasagna).

Take foil lid of frosting and put in microwave for 30 seconds, stir, pour over top layer of crackers and spread to cover.

Refrigerate at least 2 hours (overnight is better) to "set" and blend the layers.



I never have leftovers and people always want the recipe. It is super easy to make. I like to make it the night before so it sets up better (it gets better the longer it sits)
 
Since some people can't/won't eat Cool Whip (I'm one of them) here's my go to easy dessert that's Cool Whip free"

one premade graham cracker or cookie crust
2 pints good ice cream - your choice of flavors
one jar of topping - again your choice

soften one container of ice cream and fill crust halfway - refreeze
add a layer of topping - refreeze
soften other container of ice cream and finish filling pie crust.

Easy and open to lots of variations.
