Found this on a low carb eating forum a week or so ago and it's been a life saver! I was getting sick of snacking on plain pepperoni and the site suggested laying it out on a paper plate and popping it into the microwave for about 45 seconds (+ or - depending on your oven). It crisps up (kind of like on a pizza) and is a wonderful "crunchy" treat. It may sound silly, but I really miss crunchy things....and I can eat only so many BBQ porkrinds!!
