Usually most of the resorts have what is called an Easter Egg (plastic) hunt on Easter, some like BWV also have some arts and crafts activities on Easter. You can also get a visit by the bunny on Easter at the resort and, at least at BWV, Mrs. Bunny is often with him. At Epcot some of the nations do a few different things on Easter. All of that is Easter Sunday and no other day.
A few of the resort buffet restaurants have an Easter brunch (you need to make ressies well in advance to get one of those).
You will see some Easter decorations in various places around the world but Disney does not treat Easter anything like Christmas and for the most part the two Easter weeks are treated as any other spring break week (except it is far more crowded and you get later park hours)
