Easter week park day selection epcot

We will be there 3/30 -4/11. 8 day base tickets. May add PH when we get down there once we see extended hours. Also doing one day at SW and one day BG.
Currently we have 2 days AK, Hollywood, 1 day Epcot and 3 days Magic kingdom.

Epcot is our least favorite park hence only the 1 day especially with no park hopper tickets. Should I book another Epcot day in case Remy does open as we definitely would want to ride that and 2 days would give us a better chance. I am just hesitant to give up my 3rd MK day especially if I don’t have Park hoppers

Also- any thoughts on Park hoppers during that time frame? Right now with short hours seems like a waste but I am assuming they will extend. Just worried that I will pay for the PH and then no parks will be open for hopping

anyone has history of park reservations at Xmas time? Were all the parks booked everyday or could you still get same day reservations? I am assuming Easter break is going to be similar if not worse than Christmas time

No need to buy the Hopper in advance.
Just wait until you are at WDW and look to see if the parks to which you want to hop are/have recently been closed after 2PM.
If things look good, then upgrade to the Hopper.
Since you don't reserve the second park, no need to have the Hopper in advance of your trip.
