I should correct my title: Easter time is not busy as long as you go to the parks at the right time.
My husband and I were pleasantly surprised when we realized that Easter week is not as bad as we thought it would be. If you go to the parks as soon as they open, you can walk on your first few rides and only have a 15 minute wait for the rest of your rides until noontime. The crowds start to quadruple between noon and 2 pm. We usually left around 2 pm when lines were impossible, but in most cases we got on all the rides that we wanted. I believe there are a lot of people who like to sleep in on their vacations or party late into the night, so they do not drag themselves to the parks until noon. Our children are still young so we can get them up early. (I am not looking forward to the teenage years when they tend to be nocturnal.)
For example, we finished the following rides before 1:00 pm at Animal Kingdom:
Primeval Whirl - no wait
Triceratop Spin - no wait (2 times)
Safari - 10 minute wait
Jungle Trek - no wait
Devine performance
Kali River Rapdis - 15 minute wait
Lion King Show - 25 minute wait
Camp Mini/Mickey - 5 minute wait for pictures with characters.
Since this was our first year during Easter, maybe we did not experience a true Easter week because of the war.
