We have taken ME before and I thought it was great. I know they pick you up about 3 hours before your flight. But what about is you have a 7:30am departing flight. Will your pick up time still be 3 hours prior? That would 4:30am!

Early morning flights -- whether inbound or outbound -- seem like a good idea. After all, you arrive at your destination earlier in the day, so there's more time to do things that day. Also, early morning departures tend to be on time more frequently than departures later in the day. And early morning flights are sometimes considerably less expensive than flights at more desirable times.
But when you do the math regarding when you need to leave for the airport and when you need to get us to get showered and dressed, early morning departures don't seem like such a good idea any more (unless you're a super-early riser anyway).
DME pickup is 3 hours before your scheduled flight departure for domestic flights and 4 hours before your scheduled flight departure for international flights -- give or take 15 minutes. And you should be at the pick-up location 15 minutes before your scheduled DME pick-up time.
You can't use Resort Airline Check-in (RAC) -- even if you're on a RAC-participating airline -- for flights before 8:00 a.m. because the RAC desk does not open until 5:00 a.m. and RAC requires check-in 3-12 hours before your scheduled flight departure.
