Driving from Arkansas (I-75)

We will be leaving Arkansas on September 18 or 19 to drive down to Disney World. We will be driving through Jackson, MS and Mobile, AL, staying with family along the way. I am interested in any advice on good restaurants (I do know we are going to stop at Tiauna Flats in Ocala) and rest areas along the way, especially between Mobile and Disney World.

My main question is driving directions closer to WDW. We will be driving from I-10, to I-75, then I have been given 2 different options.

Should we take HWY 91 to I-4 and Osceola Pkwy
OR
I-10 to I-75 to Florida's Turnpike to WEBSTER WESTERN BELTWAY?

We are staying at Pop Century if that makes a difference.
 
With my families experience we have always taken I-75 to the Florida Turnpike and from there we used Interstate 4 when arriving at WDW.
 
Pop is on the I4 side of WDW property, so access would be slightly easier following the signs on I4 to Osceola Parkway, exit 65. Follow to the right, then turn right on Victory Way, then first right at Century Drive. Don't worry, there will be plenty of signs. Tolls should be about $3 this way on the turnpike.
