Does this plan make sense?

Never planned something like this before so no idea if it’ll work. Staying at Art of Animation and have reservations at the Grand Floridian cafe for dinner at 7:05. The plan currently is to take the bus to MK, and once there take the resort monorail to Grand Floridian and do the whole thing again when we have to leave. Does this sound possible at all?
 
Very much so, and probably your best option besides taking a Minnie Van (which obviously comes at a cost). Allow roughly 45 min for travel.
 
I think you should allow at least an hour. Disney recommends 90 minutes.

Consider taking the boat from MK to GF, as long as there are no wheelchairs or strollers that you don't want to fold. The boat runs less frequently than the Monorail, but it's a non-stop trip, whereas the Monorail will make 3 extra stops between MK & GF. The boat to GF & Poly docks right next to the Resort Monorail entrance at MK.

The Monorail will be the fastest way back from GF to MK.
 
That would take quite a while. I recommend getting a taxi or Minnie Van instead, so that you can be assured of an on-time arrival without having to leave an hour or more in advance.

You could leave a little earlier and tour the GF hotel and grounds before dinner if you haven't been there before. We like the monorail loop and we enjoyed touring the grounds the first time we were there.
