We did not eat leftovers growing up for the same reason as your SIL. My parents grew up very poor and both of them were accustomed to living on one meal's leftovers for days. To them eating 'new' food every night was a sign that they had made it up at least one rung on the ladder of success.
To be honest, I don't like leftovers. They never taste anywhere near as good as they did originally and it feels on some level like I'm a pig eating the leftover table slop. I don't even like Thanksgiving leftovers.
My dh, however, loves leftovers. I should note that he is the cook in the family. So we've handled the situation by him taking the leftovers to work for lunch. For Thanksgiving, I will eat one and a maximum of two leftover meals. That is my limit and I will not eat any more.

Some foods I cook with leftovers in mind because I don't want to cook from scratch every night of the week. Some foods taste better the second time around like spaghetti and homemade mac & cheese. When we have a misc. leftovers for dinner we call it "hodge-podge" night. The kids think they're at a open buffet instead of the take-or-leave-it cafe.
!! I cook something new each night or we order takeout. IF I have leftover chicken or something, my girls will eat it as a snack but not me. We aren't ever home for lunch either or work at places to take lunch to, so my DH and I always buy lunch.

it just tastes to "gamey" to me.
I'm thankful for everything they do for us, the dinner thing just isn't what I'm used to at all. I tend to eat large lunches
