How many people are in your party and what are their ages?
For off-site hotels I like Sheraton Anaheim, Hojo's, and Hyatt Regency Orange County. If you have a car, I would opt for Sheraton or Hojo's because Hyatt charges $15/night for parking (maybe more???) Sheraton has enormous rooms and fantastic staff, the grounds are beautiful and there are nice places in the common areas of the hotel to sit and relax. Hojo's has a better pool if you have kids - the one at the Sheraton is really deep, but Hojo's has a kid's water area that is better for young kids who aren't strong swimmers. I haven't been in the Hyatt's pool in decades so I don't even remember what it's like. Hojo's is within walking distance, Sheraton has their own complimentary shuttle which is fantastic, but you could walk if you really wanted to have a long walk - we did it once last year, walked around the back side up Disney Drive across from the parking structure and into DTD. I wouldn't normally do the walk, but we weren't in any hurry to get anywhere and wanted to check out some new scenery. Hyatt isn't at all walkable... unless you are really, really into long walks! They also have a free shuttle, it is shared with another hotel just across the street and it is also very convenient. I find the staff at the Sheraton to hold a much higher standard than the staff at Hyatt, plus they are super friendly and just really go the extra mile to make everything about your stay pleasant. I think Hojo's staff is also great, but Hojo's isn't quite the same level of hotel as the others, and the only time I really deal with anyone on their staff is at checkin, and maybe getting some munchies from the gift shop.
