Disney World with a 3 year old

My sister invited me to go to Disney World with her and her little boy. I have been to Disney World quite a few times, but never with a little boy. We thought we would have to wait a few years because she has 4 month old twin girls. My mom told her she would watch the girls (BIL works off shore), so we will hopefully be heading to WDW this summer. I am so excited! What are must dos for this age? We will have limited time to plan, so I know it will be hard to get ADRs for character breakfast (we are going to try though). Little man loves Jake, Mickey, Peter Pan, and the Octonauts. We will only have 3 full days since she doesn't want to be away from the girls for too long. This will be little man's first trip and my sister's first since we were little girls.
 
We have been taking my oldest since he was 2 years old, he is now 8 along with his younger brother who is 4 and sister who is 3.

The favorite character meals for them are:

Donald's at Tusker House in AK
Chef Mickey's
Hollywood and Vine

As for attractions:

Pretty much anything at MK, but favs are Mad Tea Party, Peter Pan, Dumbo, Pirates (although some kids can get scared).

Epcot: 3 caballeros in Mexico, Living with the Land,

AK: Safari (best to do in the morning and I try to book early breakfast at Tusker House then hit safari for best animal viewing), the boneyard, the train out to Rafiki's

HS: Toy Story Mania, Playhouse Disney show, Lights Motor Action (we always sit towards the back)

They love the parades but like MK's 3 pm the best.

Also my kids just love riding the monorail or any form of Disney transportation so try to ride all of them at least once.

Thank you for your ideas. We booked today! We are going in July. We decided to do only one character breakfast since we have so little time. We are doing Hollywood and Vine, so little man can meet Jake. He is so excited! Now I am looking for something to do a countdown with him so he can stop asking me about when we are going to "Mickey's House", lol.
 
We made a sticker countdown on the back of wrapping paper. We looked around the house for 3 different sized circles. (one for the head, one for the ears, and one for the countdown circles)Then we drew circles with in the mickey head and ears showing how many days we had left. Every day I let her fill in one of the circles with a sticker. Turned out great! If I find a pic of it, I will post it.
 

Sounds cute! I made a poster with red, yellow, and black mickey heads. We are going to cross one out every day until the big day arrives.
 
I pretty much have our trip planned out.

Day 1: We arrive at 5:30, so we will either do Downtown Disney or just hang out at the resort.
Day 2: Magic Kingdom
Day 3: Breakfast at Hollywood and Vine, Hollywood Studios, rest, then go to Epcot
Day 4: Animal Kingdom, rest, Magic Kingdom and stay for the fireworks
We also have Rainforest Cafe booked at Animal Kingdom.
Day 5: We fly out at 1030.

Is it worth using a fast pass for the Electrical Parade and then for the fireworks? Should I just use one for the Electrical Parade? What would be the best idea?
