Disney Springs seating for dinner on weekend?

Never been to Disney Springs. I plan to go on a Sunday evening in the middle of July. I was originally going to do counter service dinner (Wolfgang Puck's Express) however I hear that it is crowded on weekend evenings. Will getting a table and seating be a pain? Should I do an ADR at one of the restaurants? If so, any recommendations for a family of 4 (kids ages 6 and 8).

Disney Springs is generally more crowded on weekends due to locals visiting. But on a Sunday night, I would guess most locals are home getting ready for the week, so it might not be as bad as you think. Also, the park hours, EMH hours, and any other special events that night have an impact on how crowded (or not crowded) Disney Springs is.

For Wolfgang Puck Express, we have been there several times and more than once, the ordering line is out the door. However, the line moves fast and they turn tables over quickly. Its seat yourself so it may be difficult to seat a large group, but if you have 4 or less people, it shouldn't be too difficult. So don't let a line out the door deter you. There's several other good quick service places at DS, if WPE seems too busy for your liking.
 
If you wanted a sit down, a lot of the restaurants are on open table, so you could always book something on open table and if you do counter service, just cancel the open table reservation.
 
I’ve checked the app while walking through Dis Springs and made an ADR as we approach the restaurant. I’m sure that will work on a Sunday evening

You'll have lots of choices for counter service and TS at DS on the weekend. Missed the long lines for WP during the last weeks of December 2018 but did see them at the Chicken Guy, Earl of Sandwich and Homecomin' (although interestingly enough not for the weekend brunch at Homecomin').
As noted by a PP, opentable.com is a great place to book ressies@ Disney Springs although I'm not sure if they book the QS restaurants.
Lots of fun things for the children to do from interactive art sculptures to musical acts with dancing. I think you'll enjoy it. Went there several times to eat, shop and just walk around at take in the scene last trip.
