HI all. Dont know why, but I am just longing to be in Disneyland Paris today, or even better to be on my first trip to WDW!

Was hoping to chere myself up with some yummy Disney recipes for dinner - does anyone have any good ones they could share??

Chef Mickey's Mashed Potatoes

Amount Measure Ingredient -- Preparation Method

2 1/2 pounds peeled potatoes
1 cup butter
2 cups hot milk
4 ounces grated parmesan cheese -- (1/4 cup)
3 ounces scallions chopped
1 tablespoon salt
1 tablespoon pepper

Peel the potatoes and cut into chunks and boil about 15 minutes until tender.
Mash, using a potato masher or a heavy fork.
Put back in the pot with the butter, cheese, scallions and milk.
Blend well, adding salt and pepper to taste. (Do not use a food processor for this recipe.)

Chicken and Leek Pie

Pie

Amount Measure Ingredient -- Preparation Method

2 tablespoons butter
1/3 cup onion -- diced
1/2 cup celery -- cut on bias
1 cup leeks, whites only -- cleaned and diced
1 pound chicken breast, boneless -- cubed
2 tablespoons flour
1 1/2 cups chicken stock or broth
1/4 cup parsley -- chopped
2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon thyme
pie crust, enough for a two crust pie
1 egg -- beaten

Melt butter in a large skillet.
Add onion, celery and leeks. Saute until tender (10-15 minutes on medium heat).
Add cubed chicken meat and continue cooking until chicken is tender.
Sprinkle with flour and stir well.
Add stock, parsley, salt, pepper and thyme.
Bring to a boil and cook for 3-5 minutes.
Remove from heat and let cool slightly.
Preheat oven to 400º.
Now there are two ways to proceed.
I like smaller pies, so I use Corningware Grab-It bowls. Line 2-3 of these with pie crust (I use 3 because I don't like them quite as full. If you do three, you may need more pie crust). Spoon filling into dough-lined bowls. Top with more crust and cut a hole in center of pie. Brush with egg. Bake 20-25 minutes or until crust is golden brown and filling is hot.
The other way is to make one larger pie. Line a 2 quart casserole dish at least 2" deep with pie crust. Spoon in filling. Top with more crust. Cut hole in top. Brush with egg. Bake 25-30 minutes until crust is golden brown and filling is hot.
Allow pie(s) to rest 10 minutes before serving.

Grapefruit Cake

1 1/4 cups flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable oil
1/4 cup water
3 large eggs -- separated
3 tablespoons grapefruit juice
1/2 teaspoon fresh grated lemon peel
1/4 teaspoon cream of tartar
Frosting
16 ounces cream cheese -- softened
2 1/2 teaspoons lemon juice
1 teaspoon freshly grated lemon peel
4 drops yellow food coloring
1 cup confectioners' sugar
2 cups grapefruit segments (from Ruby Reds)
candy confetti -- garnish

Oven to 350 degrees. Lightly grease 2--8" round cake pans.
Cake: Mix flour, sugar, baking powder and salt in a large bowl. Make a well in center. Put oil, water, egg yolks, grapefruit juice and lemon peel in well.
Stir liquid to mix, then stir with flour mixture until blended and smooth.
Beat egg whites in a medium bowl with mixer on high speed until frothy. Add cream of tartar and beat just until stiff peaks form when beaters are lifted.
Using a rubber spatula, stir 1/3 of the beaten whites into batter, then gently fold in remaining whites just until blended.
Divide between pans, smoothing surface.
Bake 20 minutes or until cakes spring back when lightly touched in center. Cool cakes in pans on wire racks for 5 minutes. Run a thin knife around edges of cakes. Invert on racks to cool completely.
Frosting: Beat cream cheese in a large bowl with mixer on medium speed until smooth and fluffy. Add lemon juice, lemon peel and food coloring.
With mixer on low speed, gradually add confectioners' sugar, beating well until blended. (Frosting will be soft and airy.)
Finely chop enough grapefruit segments to measure 2 tablespoons. Gently stir into frosting.
To assemble: Place one cake layer on a serving plate. Spread top with 1/2 cup frosting. Cut enough grapefruit segments into thinner wedges to cover frosting. Top with second cake layer. Frost top and sides.
To serve: Garnish with remaining grapefruit segments and candy confetti.

House of Blues Spinach Artichoke Dip

1 1/2 cups mayonnaise
3/4 pound Parmesan cheese -- freshly grated
28 ounces artichoke hearts -- drained
1/2 pound spinach -- cleaned and chopped
2 tablespoons hot pepper sauce -- to taste
salt and pepper

In medium bowl, combine mayonnaise, cheese, artichoke hearts, spinach, hot sauce and salt and pepper to taste.
Transfer to baking dish and bake at 325 degrees until set and lightly browned, about 35-40 minutes.
Serve at once.

Mom's Meatloaf

1 pound ground beef
1/2 pound ground pork
2 large eggs -- slightly beaten
1/2 cup seasoned bread crumbs
1/4 cup finely chopped onion
1/8 cup finely chopped green bell pepper
1/8 cup finely chopped red bell pepper
1 tablespoon plus 1/4 teaspoon Worcestershire sauce
1/4 teaspoon coasely cracked balck peppercorns -- or to taste
1/4 teaspoon coarse salt -- or to taste
1/4 cup ketchup
1 1/2 teaspoons brown sugar
1 1/2 teaspoons Dijon mustard

Preheat oven to 350º. Lightly oil 8 1/2 x 4 1/2" loaf pan.
In a large bowl, combine beef, pork, eggs, bread crumbs, onion, bell peppers, 1 tablespoon Worcestershire sauce, peppercorns and salt just until well blended. Do not overmix.
Place in prepared loaf pan.
Bake for 50-60 minutes, or until the internal temperature taken with an instant-read thermometer is 155º.
Meanwhile, in a small bowl, stir together the ketchup, brown sugar, mustard and remaining 1/4 teaspoon Worcestershire sauce.
Brush the meatloaf with the ketchup mixture and bake 10 minutes longer.
Remove meatloaf from oven and let stand for 10 minutes before serving.

Rainforest Cafe Rasta Pasta

8 ounces bowtie pasta
1 teaspoon chopped garlic
2 tablespoons olive oil
1 cup chopped fresh spinach
1 cup broccoli florets
1 medium red pepper -- roasted
1 cup grilled chicken -- sliced into 1/2" pieces
1 cup prepared Alfredo sauce
1/8 cup prepared basil pesto sauce
1 teaspoon Italian seasoning
2 tablespoons shredded Parmesan cheese

Cook pasta according to package directions. Drain well and set aside.
In a 10" saute pan, saute garlic in oil.
Add spinach, broccoli, red pepper and grilled chicken.
Toss to combine.
Stir in Alfredo and pesto sauces. Simmer for 5 minutes.
Reheat pasta if necessary.
Pour pasta into bowl and top with vegetable/sauce mixture.
Sprinkle with Italian seasoning and Parmesan cheese.

Ultimate Chocolate Chip Cookie

2 1/4 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 teaspoon vanilla
1 cup chopped walnuts or pecans -- optional
11 ounces Ghirardelli Double Chocolate Chips

Preheat oven to 375ºF.
Stir flour with baking soda and salt. Set aside.
In large mixer bowl, cream butter with sugar, brown sugar, eggs and vanilla.
Gradually blend dry mixture into creamed mixture.
Stir in nuts and Double Chocolate Chips.
Drop tablespoon of dough per cookie onto ungreased cookie sheets.
Bake for 9 to 11 minutes or until golden brown.
 
Thanks you SO Much for those recipes! The chocolate chip cookies and the mashed potato sound absolutly fab. And I have had the Rasta Pasta at Rainforest Cafe in DLRP so I will give thata go this week!

I ended up doing an hour of working out (30 mins exercise bike, 30 misn weights) with the end of The Rescuers and House of Mouse on Disney Channel in the background.

Those recipes went straight in the favourites - thanks so much again, I really appreciate it!!
