Disney Institute Recipes

When the Disney Institute was still around, mum took cooking classes while I went to the animation studios. Her class made jelly or jam (from flowers if I remember correctly) that she still talks about to this day.

She wanted to make this jelly/jam the other day but can't find any of her DI recipes.

Anyone have the jelly / jam recipes - or any other recipes from DI?
