Disney Hotel Policy

How strict is Disney on the ages of people in the rooms? I am planning on booking 3 rooms for my bridal party and parents and grandparents for day of the wedding to get ready it, but plan on booking two rooms for the remainder of the time. I have no idea who all will be staying in those rooms and we probably will not be decided until after the other guests arrive after I have already checked in. Most are going to be under 18, but if we have a few that are over 18 do we have to go down to the desk and pay the extra fews if they have decided to sleep overnight?
