So I bought the gift cards and signed up for the Redcard debit card online today and I have to wait 3 days until my Redcard is approved. Would anyone be worried about waiting to buy Disney gift cards with my target gift cards in say, a week from now instead of tomorrow? I guess I am scared they will change their rules but I really want the extra 5% off with my Redcard.
I'd be more concerned with them being sold out in 3 days.
Won't they come back in stock though? I have over a year until my trip so I have time. Does that change anything or should I just buy with 10% discount?
Oh they will come back in stock...you have plenty of time then! Some people are taking vacation in the next couple weeks, myself included.

Yeah - if you don't NEED them tomorrow, I and everyone else who has a trip coming up in the near future would be very grateful if you waited a month or two.We don't have to redeem tomorrow, right? I can hold on to my target gift cards and order them in a month or two?
Right now they have a "Seasonal Delivery" option, which offers a free shipping upgrade if needed to get you your order prior to Christmas. Otherwise it is giving me an estimated arrival date of 12/28-31. Normally they meet the estimated delivery date. But, it's a risk, especially with holiday postal service.
Another option... have someone you trust get your mail, and then send you your gift card numbers. Then you can combine them on the Disney Gift Card site with whatever cards you have in hand.
