Dis Pudding Club

Hi Afternoon everyone,

Well my hubby today has quite outdone himself lol, hes been tiling my bathroom, while cooking me a yummy glazed gammon joint for dinner and making marble mini egg cakes with the girls (jessie had her friend over), we had a rake of butter icing left over from peppa pig to us( this stuff is lush if anyones intrested i have the reciepie best buttercream ever~ adapted from an American recipie)
Anyhow heres pics . x

Wow, that is taking multi tasking to a whole new level. It all looks so amazing. Make us feel bad why dont you! :rotfl: It all looks amazing. The only pic you didn't post was of the bathroom! But I guess that doesn't count as dessert so we will let you off ;)
 
Lol bathroom .......tiles are nicer than in the pic though, dont photo well, lots of depth of colour in them , this is just our feature wall, rest will be white, weve put in one of those showering baths with the curved sides.

On Saturday I had a party and made the Key Lime pie from the recipe posted on here - forgot to take photo - Doh!

Had to come on and say though it was fantastic - so refreshing and tasty and everyone wanted to know how I'd made it. Obviously I kept it secreat as it was soooooo easy I wanted them to think I was a wizz in the kitchen ;)

I must try it myself now and see if I can get the same response from my 'test subjects' one night.
 
I must stop looking at this thread!!! It really is no good for my diet. :rolleyes: Everything looks so good! I made some fudge brownies last week but didn;t take a photo, next time I bake anything i'll post it on here.

This is the cake I made for my Mums Birthday. It's madeira cake with lemon frosting.

grace and i have made key lime pie (which was very easy...will wait to see what it tastes like:rolleyes1, and we have made fudge too which has gone green:scared1:, supposed to be purple:rotfl2:

Hey Claire - my Mum was round the other day and left me Weightwatchers recipes for Banana & Baileys Muffins, Baileys Mousse and Bread and Butter Pudding. Would you like them :thumbsup2

I will be trying the muffins myself next time I am off work :goodvibes

Baileys & Banana are two of my favourite things, put them together = :cloud9:

And unfortunately I was never going to make it this half term. Work got in the way :sad2:
 
:banana: Bailey's Banana Muffins :banana:

Pro Points value - 10
Servings - 8
Prep time - 15 minutes
Cooking time - 25 minutes

Ingredients:
200g Plain flour
2 tsp Baking powder
100g Light brown sugar (muscavado)
1 Medium egg
1 tsp Vanilla extract
50g Low fat spread - melted
2 tsps Coffee (ground, instant podwer or granuals)
100ml Skimmed Milk
1 Medium banana - mashed
1 pub measure of Baileys
60g Icing sugar
Dried banana chips (for decoration)

Instructions:
Preheat the oven to gas mark 6/200 deg C (180 fan assisted)
Place 8 paper muffin cases into a muffin tray
Sift the flour and baking powder into a large mixing bowl. Stir in the sugar.
In a jug beat together the egg, vanilla extract, melted low fat spread, coffee and milk. stir until the coffee has dissolved.
Add to the dry ingredients with the mashed banana and stir until just combined. Avoid over mixing and do not beat.
Spoon into the paper cases. Bake for 20-25 minutes until risen and golden. Cool on a wire rack.
Mix together the Baileys and icing sugar to make a smooth icing then spread over the top of the muffins and decorate with the banana chips.

Bailey's Mousse

Pro Points value - 3
Servings - 6
Prep Time - 10 minutes

Ingredients:
60g Caster sugar
1 Tbsp water
3 Medium eggs, whole, separated
1 pub measure of Baileys
3 level tbsp whipping cream
1/2 heaped tbsps cocoa powder (optional)

Instructions:
Reserve 1 tbsp caster sugar. Place the remaining sugar and water in a small heavy based saucepan. Heat gently until the sugar dissolves then boil rapidly for 1 minutes until the mixture is syrupy but not caramelised.
Whisk the egg whites in a grease free boil until stiff, then slowly add the sugar syrup, beating well to combine.
Put the 3 egg yolks, remaining sugar and Baileys in a large heatproof bowl. Position the bowl over a saucepan of gently simmering water and whisk until light and frothy. This will take about 5 minutes. Whisk in the egg white mixture. Share between 6 glassed and chill in the fridge.
Whisk the whipping cream until it holds its shape then use to top the desserts.
Serve at once sprinkled with cocoa powder (if using)
 
After hearing such good things about the Key Lime Pie recipe that Kenny posted I decided to give it a go and made one for him to take to work tonight
