Dis Pudding Club

After hearing such good things about the Key Lime Pie recipe that Kenny posted I decided to give it a go and made one for him to take to work tonight

Here's how it turned out

oh yum! I made one of these from a recipe posted on the dibb last year it was yummy and everyone was very impressed at my cooking skills! :rotfl: I didn't tell them how easy it was to make ;)

The kids got stuck in decorating with white choccy buttons and Taylor got creative and made a Heart and a Star on hers :thumbsup2

We used a basic chocolate sponge mix and then topped them with chocolate buttercream.

My neighbours are very happy tonight as they get to share the cupcakes and I even made them individual Key Lime Pies :worship:

I used this recipe for the buttercream

110g/4oz butter, softened
170g/6oz icing sugar
55g/2oz cocoa powder, sifted
1-2 tbsp milk


* Beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth. Add the remaining icing sugar, cocoa powder and one tablespoon of the milk and beat until creamy. Beat in more milk if necessary to loosen the icing.

ETA: I personally found the icing a bit too chocolatey so next time I am going to cut down the amount of cocoa and up the icing sugar.

pretty much same recipe as me exept i never measure anything. mine always comes out paler maybe more cocoa will do it
 
DH and I made some Gingerbread Mickeys with chocolate ears this weekend.

Love the gingerbread Mickeys Chilly! What a fab idea. Do you have a cutter or did you cut them out freehand?

Sure I will type up the recipe & instructions tonight, its pretty easy although ours didn't quite go to plan but they still taste fine, and yes I've got a Mickey cutter which I got from WDW.
 
Makes 24

400g plain flour
3/4 teaspoon bicarbonate of soda
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/2 teaspoon salt

180g unsalted butter
125g soft dark brown sugar
1 egg
125g black treacle (I used golden syrup by mistake)

Sift the first 7 ingredients together in a bowl. Cream the sugar and butter together, then add the egg and treacle and mix together. Add a couple of spoons of the flour mixture and mix together, repeat until all flour added. A dough should form (it didn't for me!) Split mix into 3, wrap in clingfilm and refrigerate overnight.

Take mixture out of fridge and leave for 10 mins. Spread flour on a work surface and roll out the dough to about 4mm. Cut out shapes of your choice. Arrange the gingerbread on a baking tray and bake in a preheated oven (170c or gas mark 5) for 10-15 mins. Leave to cool and then decorate as you wish.
 
To celebrate St Davids Day, we have been making lots of Welsh Cakes....DD insisted on making some heart shaped ones tonight.

Over the last couple of days I have been working with my niece to make and decorate a cake for my great nephew. He is a huge Little Big Planet fan - this is what we came up with :)

I was looking at your Key Lime Pie and cupcakes the other night and thinking you would make a good neighbour .... the folk next door to me have taken to throwing food out their upstairs windows onto my decking and I report them for this. You on the other hand would be welcome to throw food at my house :lmao:
