I do super easy stuffed peppers -
I use red instead of green peppers, brown hamburg, drain. Return to pan with a jar of salsa just to warm (add some rice now if you'd like, but we don't use rice), fill peppers, top with cheese. Cover with aluminum foil and put in the oven for a long time (since the peppers weren't blanched first) at a lower temp.
