Dinner Ideas Using Hamburger....

I do super easy stuffed peppers -

I use red instead of green peppers, brown hamburg, drain. Return to pan with a jar of salsa just to warm (add some rice now if you'd like, but we don't use rice), fill peppers, top with cheese. Cover with aluminum foil and put in the oven for a long time (since the peppers weren't blanched first) at a lower temp.

We love that Bisquick cheeseburger pie, too. So good.

Here's one that's a little different. Feels gourmet, even though it's the same old ground beef. I serve it over rice.


Thai Style Ground Beef
Cooking Light

Cooking spray
1 cup thinly sliced leek (I just use onions)
1 teaspoon bottled minced garlic
1 pound lean ground sirloin
1 teaspoon red curry paste (such as Thai Kitchen)
1 cup tomato sauce
1/2 cup light coconut milk
1 tablespoon brown sugar
1/4 teaspoon grated lime rind
1 1/2 tablespoons fresh lime juice
1 tablespoon Asian fish sauce (I use soy sauce and it works fine)
3 cups hot cooked short-grain rice
Iceberg lettuce wedges (optional)
Chopped cilantro
Chopped green onions (optional)

Heat a large skillet over medium-high heat. Coat pan with cooking spray. Add leek; sauté 5 minutes. Add garlic; sauté 1 minute. Add beef; cook 7 minutes or until lightly browned, stirring to crumble. Stir in curry paste and tomato sauce; cook until half of liquid evaporates (about 2 minutes). Add milk and next 4 ingredients (through fish sauce); cook 2 minutes or until slightly thickened. Serve with the rice and lettuce wedges, if desired. Garnish with cilantro and green onions, if desired.

And I usually serve this recipe the same week I make the recipe below so that I can use up the end of the cilantro and coconut milk without them going to waste.


Curried Red Lentils with Caramelized Onions

For the Curried Red Lentils:
2 T canola oil
4 med. garlic cloves, minced
1 T minced gingerroot
2 tsp curry powder
3 1/2 cups water
1 c unsweetened coconut milk
1 1/2 c dried red lentils, rinsed and picked over to remove any stones
salt
1/4 c chopped fresh cilantro leaves

For the Quick Caramelized Onions:
2 T unsalted butter
3 med onions (about 1 pound), halved and thinly sliced
1/2 tsp salt
1/2 tsp sugar

For the lentils: Heat the oil in a large saute pan over medium-high heat until shimmering. Add the garlic, ginger, and curry powder and cook, stirring often, until fragrant, about 1 minute. Add the water, coconut milk, lentils, and 1/2 tsp salt and bring to boil. Reduce the heat to low, cover, and simmer, stirring once or twice, until the lentils have fallen apart, about 20 minutes. Uncover, raise the heat, and simmer until the lentils thicken a bit (they should be loose but not liquidy), about 5 minutes. Stir in the cilantro and adjust the seasonings, adding salt to taste.

For the onions: Meanwhile, melt the butter in a medium skillet over medium-high heat. Once the foaming subsides, add the onions, salt, and sugar and cook, stirring occasionally, until the onions soften and begin to color slightly, about 5 minutes. Reduce the heat to medium and continue to cook, stirring occasionally, until the onions are very tender and nicely brown, about 15 minutes. (If the onions start to burn at any point, reduce the heat)
 
Beef and Bean Buritos

1 pound ground beef
1 can refried beans
1 packet taco or burrito seasoning (doesn't matter which)
10 flour tortillas
8 oz (2 cups) shredded cheddar (or colby or monterey jack, whatever is on hand)
1 15oz can of tomoato sauce.

Brown the ground beef, drain. Heat the tomato sauce in a sauce pan. Add 2/3 of the seasoning packet to the the cooked ground beef and some water. Once it simmers and reduces down a little add in the can of beans, stir to combine. Add the remainin 1/3 of the packet to the tomato sauce.

Pour about 1/2 the sauce into the bottom of a 9x13 pan (glass/pyrex if you have it). Then spoon a few tablespoons of the beef/bean filling into a tortilla, add a pinch of cheese, roll, and place in the pan. Repeat until the pan is full (tends to make 10 burritos). Top with the remaining sauce and then the remaining cheese.

Bake at 350 for 20-25 minutes.
 
Salisbury steak:

Mix one pound of hamburger with a bunch of Italian seasoned breadcrumbs (yes, "abunch" IS a measurement... and more to stretch it further, less to increase the meatiness-- you can also use fresh/stale bread, but then add a bit of basil to the mix) Divide into six or so balls and flatten into an oval shape (to make it "different" than those hamburgers you had last night)
Brown meat on both sides, then add 1 package either onion OR mushroom dried gravy mix, but double the water required according to the package (usually 1c, so double it to 2c). Simmer until the meat is cooked through and the gravy has attained gravy consistency, stirring occasionally to prevent sticking and burning.

Serve over egg noodles. Plain ol' peas go very nicely with this.

This would've been my suggestion. I add Worcestershire sauce to the meat.
 
Here's a go-to item for us:

Brown the ground hamburger/discarding the grease/season with salt and pepper, and to a 2 quart casserole dish in which you've already put 1 can of chicken broth and 1 can of chicken noodle soup and 1 cup of uncooked white rice. Mix, cover, and put in an oven at 375 degrees. Check around 45 minutes to see if there is still enough liquid in it to keep the rice cooking or if the rice is done. If not add a bit of hot water and keep cooking for another 15 minutes.

We serve with a green salad usually.
This sounds good! I don't have a can of noodle soup tonight but will try this recipe tomorrow. I probably will use brown rice though.:thumbsup2
 
Beef Stroganoff. The is recipe is easy peasy. I add more beef stock than called for. use one small can sliced mushrooms. and extra sour cream for extra creaminess. This goes over well in my house.

Of course I could only choose one recipe and the one I chose was very good! The family all said that I should definitely make this one again! Maybe you all should try it too.... But with that said I now have some wonderful ideas and recipes now from my fellow disers that I will try in the future!

This sounds really good to me! How do you freeze it?

I just put it in a foil pan and put saran wrap on top and then cover in foil. I use within 3 months. Remember to take saran wrap off before cooking. 350 degrees for 30-40 minutes. It's ready when the cheese is bubbly. It freezes great and my family LOVES it.

My Mom made us 'souper rice'.

Brown and season ground beef, with or without onion, drain fat.

Heat one or two cans of Campbells tomato soup made with water. When it comes to a boil, add minute rice, 1 can of instant rice per can of soup/water. Add the ground beef, cover and let sit for 5 minutes. You can top with cheese, or whatever you prefer.

This was her 15 minute, I don't feel like cooking meal.:thumbsup2

Not that great for you, but filling with a salad, vegie and some french bread.

My mom made hamburger with rice and a can of mushroom soup and frozen peas, we loved it!
