My two cents. On our Alaskan cruise we saw people rushing in, with their excursion clothes on, in order to get in the 5:45 seating before the second seating was allowed in.

Hi, I'm actually going on the same cruise. When my family travelled with kids around that age (it's been a few years) we usually made sure the kids ate when they were hungry (as there is always food available) so that if they were exhausted by the time dinner rolled around they could either sleep in the stateroom (with or without an adult depending on age) or we actually had one or two fall asleep at the table and just woke them up at the end of dinner to take back at the end of the cruise. This was rare though because after the first day or two they adjusted to the time pretty well. Hopefully your kids adjust well too if you end up going with the later seating.

I'd book the early dining because it fills up first. Once you have it for a night or two, you can change it on board to later if you prefer. Second dining had tons of room on my Alaska cruise last year. For me, eating late didn't work out well. I found I was going to bed with a full stomach and that kind of ruined the night for me.
You can also eat room service or fast food by the pools for a night or 2 instead of the dinner. I do this sometimes because I just don't like really long dinners.
