We are planning a trip for the end of August. I am in the process of making reservations for dinner. My understanding is that we get one sit-down meal, one counter service and one snack.
What exactly is considered the counter service meal?

There is a brochure that lists all of the counter service locations, but it is pretty much any of the places where you walk up and order your food. For instance, the food courts at the resorts, Casey's Corner, Columbia Harbour Hosue, etc....

Do you mean what is included or what restaurants or....

Generally you get an entree, side, dessert and beverage or combo meal and beverage. No dessert at breakfast of course.

There are tons of counter service places. There is a list on the official Disney site as well as on the Disney Dining Plan subforum but we found places that aren't on the list that are included on the plan.
 
We just got back from Vero Beach, and boy did we miss the dining plan popcorn:: It is so worth it if you like to eat well at Disney. My family loves trying new things and with the dining plan you get your money's worth and then some. If you are good eaters don't hesitate it pays off. :thumbsup2
 

As far as the counterservice options go, we really enjoyed Wolfgang Puck Express at the Marketplace. They have quite a variety and it didn't seem like "fast food" at all. Enjoy your trip!
