Dining plan use confusion (snack credits, paying certain things OOP, etc.)

When you have the regular DDP, how do you know what is considered a snack credit? Is there an icon next to it on the menu at a CS location?

If you want to pay for something out of pocket...for example, if we go to lunch at the CS in Mexico at Epcot and I want to pay for guacamole to enjoy with my meal (assuming this is normally a snack credit since it is around $3), will the cashier be able to do that for me, to take out the CS meal off my DDP balance and then allow me to pay OOP (charge to the room or cash) for the guacamole? Are the CM's usually good about doing something like this? I like to carry very little cash and prefer to charge such things to my room. I would not want to check my balance later on and discover a snack credit was used instead when I preferred to pay OOP for it.

Also, do TS restaurants give re-fills on soft drinks, or pay OOP for extra? Thanks!!

Yes-TS do refill sodas, ice tea, coffee, etc. for free. :goodvibes

As for using a SC for Guacamole. I wouldn't count on it. Yes, many places have symbols next to those items that are inc. as a SC but I don't think Cantina de San Angel has any SC items (with exception of drinks?) They are very careful to tell you what is inc., for example, in CS meals. For example, they made sure to tell me that our only dessert option was a churro-this was fine as that's what my DD wanted. ALong with tortillas that I paid OOP for. My DM, DD, and myself shared the combo plate.
 
I would handle that transaction the same way I do (just did, in fact) in any retail establishment: "I'd like to pay for these/this separately". Order separately as well - the guac first, hand over your KttW, have it charged to your room, then the food, hand over your card again, say you want to use a Dining Plan credit.

You don't have to worry about checking "later"; just look at your slip when it's handed to you. If a DP credit has been used in error, you can correct it THEN.

And, yes on soft drinks at TS restaurants; no on non-alcoholic specialty drinks where allowed; and maybe on "ready to drink" items like milk and orange juice.
