Is the DDP based on the number of days on your ticket or your number of nights at the resort? We changed our reservations today and we are staying Saturday - Saturday with the DDP, but they only booked 7 days on our ticket reservation. How will the DP work with this?

The DDP has nothing to do with your tickets. It is based on the number of NIGHTS you are staying at your resort. A Saturday-Saturday stay is 7 nights, so you will have 7 allotments of DDP entitlements per person in your party.
 
You are correct. You only get credited for nights for the dining plan. We sometimes share some Quick service meals, so we can have a meal leftover for departure day. Or we just pay OOP for one meal(usually the cheapest) or do a restaurant not on the plan such as T-Rex if we want to splurge on atmosphere
 
And remember your credits are good until midnight of the day you check out. They don't expire when you check out.
