We will be flying in Saturday evening and staying 8 nights at BWV (with plans to purchase dining plan). We planned on staying at a value resort Saturday night bc we didn't want to have to purchase the dining plan for that Saturday (when we do not plan on visiting the parks, just unpacking and relaxing).
Has anyone heard of them not requiring dining plan purchase for check in day?

The dining plan is required to be purchased for every night if it's under one reservation. So if you would check-in at BWV on Saturday evening, you would have to buy the dining plan for that night unless you book it under a separate reservation (and switch rooms).
 
Like the PP said, the DDP is for every night of your resort reservation. Since your first night at WDW is going to be at a value and part of your BWV resort reservation you do not have to purchase the DDP for that Saturday night.

If you're thinking of changing your reservation so that all of your stay would be in one resort, you'll have to pay an extra day of the Dining plan. In this case, you'll pay for 8 nights as listed and if you add an extra night in the same unit type so you don't have to move, you'll also add a day to your DDP. I have never heard of the waving a given night due to arrival time or request though they did this routinely with a predecessor of this plan, the food n fun card.
