We are considering a few of the following, any input would be appreciated - TIA

Spoodles @ BW - breakfast or dinner
Big River Grille & Brewing @ BW - dinner
Coral Cafe @ Dolphin - breakfast
Guillver's @ Swan - dinner
House of Blues @ Downtown Disney - dinner (or lunch)
Portabello Yacht Club @ Downtown Disney - dinner

Also, anyone know of a place other than Ohana's or California Grill (even in the park) that offers a view of the MK Fireworks?

I have not eaten at any of the places you mention. I am going to try Gulliver's in May.
You can see the fireworks from some of the window tables at Narcoossee's at the Grand Floridian.
 
If you have a window seat in the castle (CRT) you will have an up close view of the fireworks. Very beautiful! The service and food can't be beat, IMHO!

House of Blues--very good food. Enjoyed the cajun meatloaf, turnip greens, and rosemary cornbread. I would classify the decor as some kind of bright and festive African folk art. Very fun art (even in the restroom).

Spoodles--I have suffered through some rude service here but I suspect that can be hit or miss anywhere. I have had one really lousy meal here and a couple of decent ones. I have read many rave reviews of their breakfast.
 
We really enjoy the Portobello Yacht club! We make a point of going there every trip, and have never been disappointed! They start you off w/ fresh bread and warm, roasted garlic for spreading. They also give you a sample of their sangria. DELICIOUS!
