You are splurging for hotels (and club level). If possible, consider a splurge on CRT. Priceless memories are made there and it’s not about the food.

I agree with PP who recommends the Swan/Dolphin lounges - love bluezoo. You could also consider Rosa Mexicana and just do apps - the guacamole is fantastic.

The food at CRT is not good, IMHO, but I would definitely consider eating there. It's so iconic!

I would probably do 1900 Park Fare for brunch. I wouldn't want to fill up on a dinner there and then go to the fireworks party.

If you are looking for higher end food, you may want to reconsider Kona. We've given it so many chances over the years and it's just not good, IMHO. Maybe consider Cali Grill to end your trip if you like finer dining?

I have gotten consistent feedback not to go to Kona Cafe so we are considering either Citrico's, Flying Fish, or Steakhouse 71. We want to either by next to Hollywood Studios where we will be coming from or on the Monorail Loop so we can enjoy dinner and go into Magic Kingdom one last time on our last night.

IMHO, Flying Fish has some of the best fish on property and does a credible job on preparing meat as well. It often has incredible desserts. For the last 10 odd years it has become a must for us.
I still haven’t forgotten the exceptionally bad service at blue zoo one Christmas which negated the excellent food. Never eaten at Steakhouse 71 and my last visit to Citrico’s was not inspiring although I’m hearing the new menu and decor are worth a visit.
