Had a family pack of ground turkey in the fridge that I had been planning on separating and freezing. The use by date was July 27 and at 8am this morning I separated and froze.

think i'm in the clear? or are those 8 hours going to cost me? or worse, get me sick?

As long as it didn't smell bad, you are fine.

Keep in mind when you are ready to use it, you will not be able to thaw it out for a couple days in the fridge. You'll need to use it directly.
 
I used to work in a meat dept. of a supermarket. When a product such as say Perdue chicken expired we would bring it back into the meat room. A butcher would unwrap the meat, re-wrap it as store brand and discount it. We would still sell it for another 2 days. I think you should be fine. We were told to reccomend one should use the meat within 5 days of purchase in the fridge or freeze.

You can soak it in cold water for an hour or two to defrost it.

It's still okay unless it looks or smells bad.

The meat will last somewhat longer past the expiration date if it is frozen., But I don't know how much longer. If you froze it as soon as you brought it home as opposed to freezing it on expiration day it will last longer. Again I don't know by how much.

For those eavesdropping and who froze the meat (expired or not expired) before separating it, do not thaw it all out. Instead leave it frozen and cut off the portion you want using a saw (the carpenter's kind). Then you can thaw just the portion you are using that day.
