DH's uncle has a smoker and makes wonderful turkey in it. I always thought turkey was dry and a bit tasteless, but smoked turkey is moist and has a great flavor.

We have two turkeys every Thanksgiving, one regular, one smoked. There are rarely any leftovers of the smoked turkey. I have the meat department take the legs off so it doesn't take as long to smoke. I "stuff" the turkey with onions and celery. The legs go on one rack and the rest of the turkey on the top rack. It is so yummy!

Not quite the same, but DH smoked a chicken last night and it was wonderful. He injected it with marinade the night before & then smoked it yesterday afternoon. It was not dry at all.
