Dessert to feed a large crowd?

I've volunteered to make a dessert for DS's Cub Scout Blue & Gold dinner. I can't make cake or cupcakes because a cake has been ordered. I could make choc chip cookies or brownies, but I was wondering if anyone has any other suggestions.

Banana pudding with nilla wafers and sliced bananas? Could make a BIG bowl of it
 
Snickers Salad

Granny Smith Apples - Sliced
Snickers Fun Size Bars - Quartered
Cool Whip

The amount of each depends on the amount you make, but there should be more apples than candy, and everything covered in Cool Whip.

We usually use 1 bag snickers, 1 bag apples, and 1.5 tubs Cool Whip.

Adults and kids love it!
 
Rice Krispie bars

Every one likes them and you can make a couple variations if you feel like it and want to make it more "fancy"

Drizzle some chocolate on some, add in some fruity pebbles to a batch, etc.

And they are easy to transport and aren't expensive, can be pre-cut and plated, and easy to serve.
 

This is a favorite with kids:

Dirt Pudding
1 large package of oreos, finely crushed (can use vanilla sandwich cookies too)
2 tubs cool whip, defrosted
2 sticks of butter, room temp
2 blocks cream cheese, room temp
2 cups milk
2 small packs of instant vanilla pudding
***I have made this with low fat ingredients and it comes out just as good!

Mix all ingredients together well (EXCEPT) cookie crumbs. In a pan, layer half of the cookies, then all of the pudding mix, then remainder of the cookies.

That is it! Refridgerate for at least an hour. Decorate the top to your liking...worms, flowers, little umbrellas, etc.
 
For a crowd, I always make a chocolate trifle and I tell you the bowl is always scraped clean.

1 pkg. (2-layer size) chocolate cake mix
1 qt. (4 cups) cold milk
2 pkg. (4-serving size each) JELL-O Chocolate Instant Pudding
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
4 pkg. (1.4 oz. each) chocolate-covered English toffee bars, crushed

Make It
PREPARE cake batter and bake in 13x9-inch baking pan as directed on package. Cool completely on wire rack. Cut into 1/2-inch cubes.

ADD milk to dry pudding mix in medium bowl. Beat with wire whisk 2 minutes or until well blended.

LAYER half each of the cake cubes, pudding, whipped topping and crushed chocolate bars in large glass trifle bowl. Repeat all layers. Serve immediately or cover and refrigerate until ready to serve.

I second this suggestion, especially considering there will be a lot of kids there.

there is a graham cracker mock eclair dessert that everyone at church loves and it is EASY!

2 individual packages graham crackers
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting


Line the bottom of a 9x13-inch pan with graham crackers. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding. Top all with a final layer of graham crackers and frost with chocolate frosting. Refrigerate until serving

How about chocolate pretzels.

bag of small pretzels
hershey kisses dark or regular
plain m&m's. (I use whatever color is seasonal)

put pretzels on a tray, unwrap kisses and place 1 on each pretzel. Stick in a preheated 350 degree oven for about 15-20 seconds. (The kisses should be soft but not melting). Take the tray out of the oven and place an m&m (face down) on each kiss--while pushing the kiss down so it adheres to the pretzel. Stick in the fridge or freezer to set for about 15 mins. The most complicated part is unwrapping the kisses.

The mint and cherry cordial m&m's are very tasty with this!
 
I really like the crispy treats.
Using some drizzle of chocolate for the "color/s" of your scout troop;) WIll go over B I G for the boys!

While I would love to go fancy with chocolate tart cups with chocolate mousse, I would probably go for simple with the Rice Krispy treats with chocolate drizzle on it.

STRAWBERRY SOUP

INGREDIENTS:

6 Lb Strawberries (frozen variety, thawed with juice and pureed)
3 Qt Sour Cream
⅓ Cup + 2 tsp Lemon Juice (frozen variety, reconstituted, not concentrated)
¾ Cup Vanilla Extract
2 Cup + 2 oz Sifted Powdered Sugar (by cup measure)
⅓ Cup + 2 tsp Grenadine Syrup
1½ Cup Half-and-Half

METHOD OF PREPARATION:

Mix strawberries and sour cream, beat slowly until well mixed. While mixing, add grenadine, lemon juice, vanilla extract and sugar until a smooth consistency. Add half-and-half and mix for five seconds. Chill, shake well before serving. Fresh strawberry halves may be added as a garnish.

And if you go to Costco, you can get 3 pound bags of strawberries and 1½ quart tubs of Sour Creeam. Note this is the original recipe, not the current one which uses yogurt.
