I know that right now we don't have to pay in full until 7 days before check-in date. Does anyone know, if you cancel 7 days before check-in do you get a refund on the deposit for the vacation package?

Yes, you would get a full refund of your deposit and any other amount paid (if you had made any other payments by that point) on your package.
