Since I don't see Millennium Falcon in the table, is it really possible that it is almost never down during EE?

That's correct. One of the interesting things about the data is how well rides with built-in fault tolerance perform:

• Soarin' has 3 theaters that run largely independently - down 2% at rope drop.
• Flight of Passage has multiple ride systems - down 2% at rope drop
• Toy Story Mania has 3 ride tracks - down 4%
