I am really excited....but I have got so much going on...between the wedding, then the baby and then the cruise...the fall is going to be very busy for me. So I am sure it will go pretty fast.

I was out washing my car...I have a 2013 Hyundai Sonata....and as I am washing the trunk area ...my S in the sonata comes off....:eek: so I guess its to the dealer and have them put it back on. It look like it was glued on...:confused3 at least I lost it while I was washing it and it didn't just fall off and not know where its at. crazy.....

it is really getting hot out now...

I always thought those things were screwed in or something. I've got a 2009 Mazda 3 and it's been really good. Except this afternoon when I was driving a saw a symbol light come up and I had to take a pic and send it to DH. It turns out my fog lights were on. I didn't even know I had fog lights!

We had a pack rat, finally got here around 6:00. Unloaded about 2/3, still a lot of unpacking. But starting to feel like home now that our stuff is here. Mark doesn't get down until Sunday, so just me for now. It's all good, I am so OCD all we would have done is fight anyway..:lmao:

Just got home from Disney and am bummed for two reasons:

1. I just left Disney and my niece and nephew
2. Southwest lost my luggage (fortunately the only thing that I really need from that is a knee brace) -- Update: My luggage has been found! Go Southwest!

Dang.

Got my luggage back today - Glad to have my clothes back, but most importantly a knee brace that was kinda expensive. :cheer2:

I had a great time, staying at the Beach Club made for an easy time getting to and from Epcot for Illuminations on the 4th. I swear it seemed like there were more people there than last year.

Had a great view of the Boardwalk from our room, and at at Kouzzina's for breakfast before leaving for the airport.

I would not hesitate to stay there again. Looking forward to the cruise now!

You should've heard me try and explain it to him before he told me to take a pic to send to him! It's kinda like a wiggle scar with a funny shaped D next to it :rolleyes1 And the oil light - well that's just a watering can to me :scared:

I am so not mechanical....I can add winderwasher fluid and that's about it. Wally was telling me today, on the new car's that you cannot use jumper cables on them....:confused3 I'm like really, I didn't know that, but good to know and thanks for that...he was pretty surprised I didn't know that. Hello, I know how to drive and add winder washer fluid....I'm good....!!!:rotfl:

2 days, wow. We make our own too, but we usually get it done in a day. How long do you simmer? Curious, what do you put in yours?

I have a big stock pot, I am not sure how big it is but it would be at least 20 litres. I fill it up to about 3/4 full with half of that chopped tomatoes, with the rest of it whatever chopped vegetables I have available, such as eggplant, capsicum (bell peppers), button squash, brown onions, a whole clove of garlic (crushed and peeled), carrots, celery, zucchini, handfuls of torn basil, oregano, thyme, parsley, bay leaves (always count how many bay leaves you put in so you know how many to remove) etc. I add a half bottle of red wine and stir it all in together, put the lid on and simmer away until it's reduced by about a 1/4. Stir often. If it is looking too thick and the vegetables aren't falling apart I add a bit of water. Basically you want it to get to the consistency of a puree type of thing. (you can sautee the garlic and onion before adding to the pot if you want, sometimes I do this and sometimes I don't, but it does help bring the flavours out).

The next day I put the pot back on the stove and set to simmer for another couple of hours with a tablespoon each of salt and sugar. Remove the bay leaves from the day before then moosh everything up with the stick mixer (or you can put it in the food processor but that just means more washing up for me). While the vegetables are simmering I cook up the meat. I use about 4 kilos of mince (ground) beef usually but this time I used a venison/beef/lamb/pork mix plus about 8 chopped slices of pancetta or prosciutto. You could use bacon if you like. Cook in batches, drain and add to the vegetable sauce. Mix it all together and add about 1/2 jar or more of tomato paste to thicken as required. 1/2 a jar is always my minimum as I like it for the taste. By this stage you should have almost a full stock pot of stuff. I let it simmer for the rest of the day so the meat and vegetable flavours combine. Taste and adjust seasoning as required then freeze in batches in containers. I use disposable ones as the sauce almost always stains the plastic container. That's about it.

The amount you make depends on the amount of ingredients you put in. You don't need to make as much as I do, but keep the 1/2 tomatoes, 1/4 other vegetables ratio and you should be right. Sometimes I just made the vegetable sauce sometimes I add the meat. It depends on how I feel. If I make it with meat and sauce together I can consider it my takeaway food - just take it out of the freezer, chuck it in the microwave, add to cooked pasta and you're done :cheer2:

If I have leftover jars of char grilled tomatoes, capsicum or jalapenos in the fridge I often add these to the sauce too.

So, that's my sauce. I did start off following a recipe but over the years I've just chopped and change to suit myself and how lazy I am on the day. :wave2:

The window wiper fluid and the petrol (gas) are the only things I'm allowed to add or touch too :rolleyes1 I did know about the jumper cables though, the battery died last year - in the pick up zone at DS's school (and I wasn't at the top of the line, either, so had lots of cranky parents behind me beeping at me to to tell me to 'move up')! pirate:

Rainy day here. We needed the rain, my tomatoes looked really thristy and I really didnt feel like pulling the hose out to water...so glad its raining out.
